Ingredients (材料):
4 cucumbers (黄瓜)
2 carrots (红萝卜)
250g long bean (长豆)
300g cabbage (包菜)
*200g pineapple, optional (黄梨,隋意)
Spices , grounded finely (香辣料,打烂):
40g dried chillies (辣椒干)
30 shallots (葱头仔)
1 onion (洋葱)
3 stalks lemon grass (香茅)
50g galangal (南姜)
20g turmeric (黄姜)
50g candlenuts (月桂豆/石古仔)
8 tbsp oil (油)
3 tsp salt (盐)
150ml vinegar (白米醋)
180g sugar (白砂糖)
200g peanuts (花生碎)
100g toasted white sesame seeds (白芝麻,炒香)
For blanching vegetables (烫菜用):
3 litres of water (清水)
200ml vinegar (白米醋)
