Bonjour, le modèle Carbone Plus est compatible avec une utilisation flash four (maximum 10 minutes à 200°C). Il n’est pas recommandé de procéder au culottage au four pour ce modèle. Is this a carbon steel pan? I notice that after using it and trying to clean it, it still has a lot residue discoloration from the seasoning and searing of the meat. IS THERE ANY WAY TO COMPLETELY CLEAN OFF THE DISCOLORATION of the pan to preserve the shiny new steel look to it?
No, it is supposed to get darker and darker with time. If you want it to remain shiny you ll have to scrub the pan with a metal brush and hot water for example. If you do so you will lose the benefits of cooking with it before. The more you cook without scrubing the darkness out, the less sticky the pan will be while cooking

He is really clear about what you should and shouldn't do with a pan. Im going to buy a mineral B this week and on the reseller's website it says it's oven proof but I dont know if that counts for every mineral B skillet

@@Rauz11 what I read is that the mineral b comes with a beeswax coating and the carbone plus doesn't. Not sure if that is the only difference and why it's added in the first place (you have to clean it off before seasoning).
