Full written recipe of Indori Shahi Shikanji
Ingredients:
2 tablespoons milk
Few saffron strands
12-14 cashew nuts, soaked
1½ cups hung curd
¼ cup raisins, soaked
¼ cup rabdi
½ cup sugar
2-3 green cardamoms
Milk if required to adjust the consistency
For garnishing
Slivers of pistachios & almonds
Dried rose petals
Method:
1. Boil the milk, add it to the saffron strands and let it soak, keep it aside.
2. In a blender jar add soaked cashew nuts and coarsely grind them.
3. Add in the hung curd, soaked raisins, add in the rabdi saving some for garnishing. Add in the sugar, soaked saffron and blend this all well.
4. Add in the cardamom seeds. Blend it again till it's nice and smooth. Add milk if needed to adjust consistency.
5. In a glass pour the shikanji, top it up with remaining rabdi, saffron strands, slivers of pistachios & almonds and dried rose petals.
