Yes sardines is the word in English ☺️. In the Caribbean we cook salted cod fish and yes have to soak and/or boil it to make it less salty, but of course keep enough salt to flavor our dish, be it salt fish and ackee, fried cod fish cakes, callaloo made with salt fish, or fish and coo coo. Madrasis - refer to particular religion, it has nothing to do with the Capital city Madras (now chennai).

It's a yummy recipe and we too cook this katasingo what we call kokoli ( small sardine dry fish) and we cook with mustard seed ,green chillies ,garlic paste cooked with mustard oil .It's a curry we eat with rice . Sometimes we first dry roast it and dip in water to remove all sand particles then fry with mustard oil and eat with fermented rice during summer season to cool stomach

Ohhhh my we use that same type of grater to grate coconut, we call it a sit down grater in Guyana, South America. We use a sieve or strainer used to strain coconut milk.

Most of your cooking resembles our tamilian food the vessel what u use ever for grating coconut also we use the same its known as thengai thuruvi ,it's known as Nethili karuvadu in tamil and the same way we also use egg plant but we cut in bigger size and they way u extract coconut milk alone looks different .happy for you all the best keep rocking
