I'm flying from Prague to Montréal via Paris (with eTA), so I was wondering if I need to go through the passport control, since I'm transitting/transferring to another plane?
This is so awesome, I was worried as I will be traveling from Lisbon to Delhi Via Paris (this airport) but i dont know what gate numbers i will have to go to and where my immigration will take place in lisbon or in paris 😢

Very simple, I believe depending on where you plane will landing HALL K,L OR M , but if youwere to arrive at L gates for example you would simply take the CDG VAL to the European Union customs and then proceed to this exact trip but in reverse
No, it means you're going from a non schengen terminal to a schengen one. So changing of terminal is your enter point into schengen space. (So no passeport control at the arrival of your following flight)
