Ingredients -
- 1 whole goose
-1 store bough injectable, we used a butter jalapeno
- your choice of herbs and spices
Brine -
- 1/3 water in 5 gallon bucket
- 1 cup kosher salt
- 1 white onion
- 10 cloves garlic
- 1/2 cup of candied ginger
- 1 Tablespoon of all spice
- 6 bay leaves
