This time of year the daylight hours are minimal here in Alaska. With the sun rising at about 10am & setting around 3:30pm, a lot of the work on the homestead gets done in the darkness. Join us as we head to town for a supply run + some Christmas shopping for the boys! I am so excited to see the cabin addition coming together. Joe has worked so hard and skillfully built a beautiful space that we will soon call our new bedroom. We're beginning to install the interior siding and it's prettier than I expected. BAKED CHICKEN RECIPE:
Preheat oven to 350F degrees
Rinse & pat your chicken dry with a paper towel.
Generously rub your chicken down with olive oil or butter.
Season as desired, I heavily salt/pepper my chicken & also season with onion pwdr, garlic pwdr & Italian seasoning or just Rosemary & Thyme. I eye ball this, giving a good coat of seasoning! Cover & bake the chicken breast side down for 45 minutes, then increase the oven temperature to 400F degrees, remove the lid, and roast for 20 minutes more. Flip the chicken over, breast side up & bake until the thickest part of the thigh reaches 165F degrees, about 30-40 minutes longer. This is such a simple dinner & you can debone the leftovers and use them the next day in a soup or chicken enchiladas!

I've been a chef over 30 years, an old diner trick I learned years ago was to cook your chicken or turkey breast down so the juices run into it, breast up they run out of it. Breast up is basically just for looks. Just a tip, yours looked delicious by the way.

Aesthetically, I would say the black iron, we’ve stayed in log cabins for holidays and the black iron accents the wood beautifully and it just naturally compliments each other 👍😜

I wanted to make my comment yesterday because of how much your family helped me without even knowing it but I have a toddler that seems to be a true empath (even my kitty, Buddy Boy) and made it truly impossible. Yesterday was my Dad's 4 year anniversary of passing along with my Grandmother's birthday who passed 3 year's ago. Being able to watch a new video, it really helped. It helped distract me at times but also brought amazing memories upfront too. Joe is truly a doppelganger of my Dad in every way you present. Jack of all trades, playful yet kind of a quiet man. He'd get down and wrestle with me and my kid's at every opportunity and he and I use to snowmobile doing all the craziest jumps and "who could get the highest" at the gravel pit's. He was my hunting buddy and best friend. I'd be willing to bet even my Dad would have enjoyed your videos in every way. He was the cook in the family too and would love every one of your recipes. Most definitely, thank you for your video's 😊

ANOTER GREAT VIDEO!! Tina, I'm 60 yrs old have had a dependent child in my home since i was 16. Two years ago our youngest left for college and I have really struggled with having any desire to cook. I just feel burnt out and tired of cooking the same things. I learn so much from watching you prepare meals and every week I'm completely re-inspired to cook. Some weeks i make the same meal you do. Def wrought iron chandelier. Addition is taking shape, Joe is so talented. Tina I love to watch you meal prep then see your family saying grace before they enjoy your tasty looking meals. I like that you broke up the wood wall with the black chandelier. Your children looked delicious. I will try it. Looks like your kitty is healing thank god. My husband said it takes a very sick person to shoot someone’s pet. Joe always hard at work. Your room is looking good.

I feel that the antler chandelier is more for a living space, like the lounge room or a study - where you are awake to view it and can share easily with others. I like the black, it's calmer and less stimulating so it's more likely to support/encourage sleep.
