This sounds amazing! I have ripe bananas just waiting to be made into these muffins 😋 The recipe in the description below and on the blog says 2 1/4 cups of almond flour but in your video you mentioned 2 1/2 cups of almond flour. Which one is correct? 😊
@@dawnmadsen7781 she used almond flour in the recipe. It is a gluten-free flour. Make sure your other ingredients are all gluten-free. I always check labels. My daughter has allergies and celiac disease. We have to have everything in our house gluten-free.
I have adhd and I wanted to bake so my adhd randomly got my hyper fixated on baking I was using recipes and none of them worked only to find out the flower we had was almond flower I did the recipe and it worked out so good I’m 14 and this is my first time baking all by myself. I’m so proud of myself. Even my grandma who is really picky liked them it was super simple and I didn’t add sweetener I used syrup. Thank you so much
Thanks very much Dani. You can also use 1/3 cup of unsweetened Apple Sauce in place of eggs. I bake with apple sauce and it always turns out Great. I will be trying this recipe with blueberries instead of bananas & chocolate chips tonight; will try the chocolate chips later on. Thanks again.
Just baked this 2 hours ago. Legit. It is good! Very soft, scrumptious…. You won’t even believe this is a healthier version. I just made one adjustment… i used more than twice the recommended choco chips! I recommend deviating from this part of the recipe if you love chocolates 😊
Love this recipe! I've made them 5 times! Switched out the chocolate chips with either walnuts, white chocolate chips, or frozen blueberries (yum!). Also switched out 2 bananas with sweet potato (same ounces) once...so yummy!! So glad I found this recipe as it's so versatile. It's really hard to not eat too many at once. LOL

Just made this recipe tonight. The muffins were delicious and moist. They were very tender and delicate, so I would suggest using paper liners in your muffin pan, as I had a very difficult time getting these out without breaking them, even using an oiled and non-stick muffin pan. They were great however and I will be making them again- only this time with paper liners.
I also use them with paper liner , keep in mind it’s best to use them ones that are like “ foil” look because the plain paper ones are cheap and will glue !

These muffins are in my meal plan every week! I’ve recently started staying away from gluten and refined sugar, and these things are saving me from giving into bread, sugar and even pasta cravings. They give me the texture I crave, along with tasting amazing! I also put in raw walnuts for some extra crunch and healthy fat.

Made these yesterday. Used coconut sugar this round. May try half coconut and half monk next round. I may leave out the chocolate chips too in next round to keep the calories lower. I also tried multiple ways in baking using silicone, paper liners and no liners. To me the no liners is not a good idea at all. Even with coating on a non stick, they stick a lot. Lol. I love the silicone best and I love the mini sizes best of all. Overall though, I’m sooooo happy and excited with the results. They’re super moist and gluten free and taste great! Thank you! 🥰
We love this recipe. I made these once and absolutely loved them! They were so great and the recipe is so straight forward that my 10 year old who is learning how to bake and cook just made this whole recipe from start to finish without my help at all and the bonus, they’re healthy for him to eat. He’s over the moon proud of himself and so am I. They are freakishly delicious! Thank you so much for this recipe. It’s now a go to in our house :) ♥️
My grandson and I are NUTS about these muffins! Some of THE most delicious stuff we've ever eaten! I took a screen shot of the recipe and didn't have your website or name attached. I couldn't find it it my history and so I looked and looked and looked until I found it so that I could access your other recipes. If they are as good as this, you have a fan forever! Bonus: I had all the ingredients on hand. Didn't have to go buy any exotic ingredients. Thank you, thank you; going to try the oatmeal carrot muffins next.
Just made these and used maple syrup instead of MonkFruit. They are delicious. I couldn’t wait until they completely cooled to try them and they kind of fell apart. I grabbed a spoon. Delicious.
Wow these were fantastic. I switched it up just a bit with one cup almond flour, one cup gluten free flour, and 1/2ish cup of oat fiber. Im not Keto but these were still fairly low carb (14 net carbs) and with the gluten free flour, the sweetener doesn’t get that off putting cooling taste. I also did 5 tablespoons of Erythritol as I want my kiddos to eat them for school. They were delicious and the texture was AMAZING! The best healthy muffin I’ve ever made!!
Love your recipes! Made the oatmeal cottage pancakes (added blueberries!) and now these!! Only had two ripe bananas so used a big scoop of cottage cheese - protein! Had one while it was warm - oh my goodness! You're the best!! Delicious! Who would know just how healthy these are?!! Would send a pic if I could!
Just made these and my whole family loved them. I subbed granulated brown Swerve for monk fruit in the same amount as the recipe and it turned out great. Very moist and sweet. Good call on the extra chocolate chips on top!
These muffins ARE delicious!! I made them twice, once with honey instead of monk fruit and once with pure maple syrup because that's what I had on hand. The honey muffins were ever so slightly better than the muffins with maple syrup, but both were delish! I used muffin pan paper liners. My hubby loved them also!
Off in the oven they go! This looks really delicious, I followed the options for a vegan banana muffin so I used the flax eggs. Which I will note that this made my batter too watery looking and so I made small additions to ensure they won’t come out too dense and have a bit more structure. I added a few tablespoons of coconut flour and a little cornstarch. I didn’t add any chocolate chips. Can’t wait to try out your chocolate banana loaf. ❤
!Update 🎉 They came out moist, delicious and soft! They did rise just a bit but after completely cooling they settled down flat. I cooked at the recommended time and cooled off about 10-12 minutes. I used a toothpick to check the center and they came out clean, the flavor as mentioned was superb, however even though the texture was soft I feel like they didn’t have enough structure so eating a moist and soft muffin felt like mushy? Like eating a warm almost gooey banana lol not complaining really but I want to the end result to be fluffy texture. Maybe I’ll add more cornstarch next time, any suggestions for that fluffy structure is greatly appreciated ❤
They look fantastic will try them on Monday hopefully, love this recipe. I‘ve left Almond flour after my Vaccinations because of my allergies... I had had Pfizer ones. So scared to eat any nuts family at these periods. Now my body is strong again and I feel like I can go back to my almonds again. I will grind the almonds at home. Thanks for the tips as well. There was no olive oil in this one will check again. Since I've been convinced that coconut oil is blocking the arteries left using this oil. On my neck, I have got an artery that has calcifications %25 blocked. So only use pure Olve Oil which is safe for people like me. Thanks again will continue to follow you. The reason I've mentioned these issues at first, is I'm a health fanatic secondly you began to mention healthy staff more in your podcasts. Also, I follow Dr Sinclair's regime🤗💊💊 Thanks again. You OWNED it in this video presentation!!! As the questions and comments arose in my head, there you go answering them fully and quickly. You covered it all!!! Not a chia seed fan ( few times of tasting) but I DO want to get away from eggs ( just seen as healthier) and , me well erythrotol , all I can think of is that it can promote tummy upsets that I won’t define here, LOVE maple syrup. I am not paleo nor keto ( to each their own) but am aiming towards a mostly raw ( need cooked for cooler days and nites) diet. All of the other ingredients I always have on hand, So , I cannot wait to try. Thank you so much for going to the trouble of alternatives for a much beloved comfort food!!!
YUMMY! Just made these this morning and they are delicious and moist! I did add 1/2 tsp of salt (I believe the baking powder needs it to rise properly? ... so maybe you left it out of your recipe that you posted Dani?) I subbed the sugar with organic date syrup and left out the chocolate chips and went for a few chia seeds sprinkled on top..... oh they are divine! Thank you for a terrific recipe! Will be making these all the time!

Hi Dani! Thanks for all you do. I have recently discovered oat flour because my family doesn’t consume any oatmeal. It’s much cheaper than almond flour too. Can you incorporate oat flour in your recipes?
I have a friend who makes a banana bread w almond flour and raw tehina (500g) and the other 'normal' ingredients one puts in the batter, andchocolatechipson top. Sometimesshe adds oats/raisins/nuts/seeds. It is meant to be a GF bread/cake.

Made this yesterday while it snowed here in the northeast. So yummy and easy! (Posted results on instagram with you tagged!) I love muffins but never eat them knowing how much fat they have. Even the fat in this recipe is healthier, coming from almonds and very little egg. This is a keeper!

Hola, acabo de hacerlos, solo intercambie el 1/4 de taza de harina Almendras por harina de avena y agregue nuez e intercambie monk fruit por miel de abeja y salieron muy ricos 😉
I use frozen blueberries in baking without any problems. I coat them in coconut flour and if making cake or muffins, I then just sprinkle them on top or mix them in a little.
For your awareness, in your video you say to use 2.5 cups of almond flour but the recipe in the description box and on your site says to use 2.25 cups.
