BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour the milk mixture over the oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
Recipe Notes
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.

I just finished baking these...and LAWDHAMERCY !!! As of tonight, I pledge to ALWAYS keep the following ingredients in my home : OATS...BANANAS...RED APPLES...PECANS...and HONEY. As long as have those 5, I will NEVER buy sweets again. U just WILL NOT find these muffins in restaurants or stores. I feel so empowered now knowing I can make my own HEALTHY SWEETS. I tried them!! They were delicious!!!! The best healthy & sweet treat ever!! I added 2 tbs of honey and I used whole milk, also used dark chocolate chunks! Over all it's just amazing!!

I just made this as a loaf because I did not have muffin tins and increased the time to 1 hr. Delicious. Especially good toasted in toaster over with almond butter! Yum! Thanks for great recipes and easy to follow directions!

I had to modify the recipe as I’m intolerant to eggs and milk. I used hemp milk and chia seeds and flax seeds as an egg substitute. It still turned out great! They are delicious! Thank you so much...so glad I found your channel. 🙏🏼💜🌻

B N I wind up eyeballing it, I usually add one more scoop after I’ve ground them. If you grind them into a powder/flour form you may need a little extra. Just eyeball it & carefully add liquid in stages. You can do no wrong! My ground is a perfect mix between chunky & powdery

I rarely bake (or cook alot) but I tried this recipe tonight and it came out super delicious!! I did leave it for more time in my oven of 40 minutes which formed a golden crisp top and well formed body. No more sugary, store bought muffins for me now!!

We cook for 8 disabled seniors. For breakfast they get Rice Pudding, Fresh Fruit Cups and These Wonderful Muffins. I am having such a good time since I found Clean & Delicious !!! MRS A in SF ( I ran out of mini chips, so when they cooled I put nutella on top )

Thanks so much for this recipe! Simple ingredients and easy to make. It tastes SUPER GOOD!!! I don't have a muffin tray, so I just pour the mixture into a flat tray and it becomes granola bar!! (need to bake for a longer time) It's really delicious!!!

I've been eating one of these muffins nearly every day for months now - it's a great after run/workout treat . I've added dark cocoa powder, dark chocolate chips, whatever nuts I have in the pantry, and a couple of tablespoons of psyllium husk to mine (because mine were kinda falling apart without it - probably because I use more banana than you do - and more extras) and I use kefir milk instead of plain milk. DELICIOUS!!!

This has been my go to for a protien snack. I add walnuts, and pumpkin spice bone broth protien powder. To serve i add nut butter. Its delicious!

Delicious! I took 2 cups of oats,1/2 cup of almond flour,1/2 cup of coconut flour ,and the rest of it. Came out very nice 👍 Today I am going to change even more. 1 cup of oats, 1cup of komut flour,1/2 almond fl. 1/2 coconut fl. and the rest of it. Will see what will happen 👍🙋🏼‍♀️

I'd probably add 2 scoops to the recipe which will double the protein content per muffin to about 7-8 grams. they will be a little less moist, but if you use a banana or vanilla protein powder they will enhance flavor.

Tastes amazing! used regular milk instead of almond milk and raisins instead of chocolates. I also added a pinch of vanilla (for the eggs) but honestly the taste and the texture is more than awesome. Tried some few recipes like this before and this by far is the best! Thanks a lot

I make a similar recipe but I run my oats through a food processor to turn them into more of a 'flour'! It makes the muffins a little fluffier!

I adjusted with grounding my oats - adding brown sugar - adding extra unground oats and semi sweet chocolate chips and large chunks of 1 full banana after All Other ingredients was gently mixed. Scooped 1/2 cup of batter into muffin pan and cooked for 25 minutes. These came out exquisite!! Ide post a pic but I can’t. Lol. Truly a healthy grab and go food !!

This is the second time I have made these. Love them. I am really trying hard to eat better. These help me with me eating cake or cookies. Great substitution. It also fills me up for a little longer.

I just used the paper cups instead of the oil spray, bananas were super ripe (pretty much all black) that my mom was ready to throw out, used 2% fine filtered milk. These are by far the BEST muffins we’ve all had! Used dark chocolate chips and omg they were so great. Thank you for this recipe! Sooo moist too!!

Why you wanna know my name!? I made two batches. One with the chocolate chips and walnut mixed in, and the other with both on top. I liked the batch with the chips and nuts on top. They were a bit soggy mixed into the batter.

@@canelasdoodles FRESH of course! I blend almond milk, 2 eggs, 3 large bananas, 1 cup of blueberries and pour that on top of the dry mix. then add another cup of fresh blueberries to the mix. trust.

They do work just fine -- except the glycemic index for quick oats is higher. Not a good thing.

I’ve been looking for some lazy muffin recipes and these look amazing, I’m vegan, so I would skip out on the eggs (maybe I’d use a chia egg or flax egg), but still a good idea

been making these for a few weeks but decided to grind the oats to give it the texture of standard muffins, also added some beet/ carrot pulp left over from juicing, pumpkin and chia seeds and topped with rasberries and blueberries. The combination , flavor and nutrient density is so great that its become our fav snack during the day. Thanks alot

OMG! Thank you soo much posting such a wonderful video! Made these today and they are delicious!!! I made them my own by skipping the nutmeg and instead adding almond extract, fresh raspberries and a touch of stevia (only 1 tsp) and splenda brown sugar (2 tsp on top with the cinnamon and stevia) They are sooo delicious and on my Weight Watchers plan only 1 point! Also I made cakes instead of muffins because I was too lazy to fill the muffin cups! I'm hooked! going to try it with other flavors too like anise extract or maybe chocolate chips with the raspberries, blueberries and vanilla or lemon, etc. Thank you for being such a fabulous poster and obviously great parent! Cute little girl!

Made this with really ripe bananas and the muffins came out perfect! I used 2% reduced fat milk and no toppings at all and it was so delicious even straight from the fridge!!! Thank you for sharing this recipe☺

People complaining about blandness.. As a diabetic type 1 which can not eat sugar almost at all, i'm used to sweetness only from fruit, they were great and easy. I added also a full teaspoon of cocoa powder, think it makes the difference without adding calories, taking away healthyness

Sugar is the devil especially the refined sugar! Most people don't realize how addictive it is, worst than hard drugs. God is not stupid, all the sweet we need are in fruits, like every other natural food still needs to be eaten in moderation. Banana is so sweet, I can never imagine using sugar in this recipe.

If you cut down on sugar your tongue soon forgets what refined sugar is like and can taste more sweetness in things like fruit.

Will the baking time differ if I blend the oats to a more flour like texture? They seem to be really moist on the inside. I'm wondering if I am under-baking them

for the perfect baking,,,check it in between 20-25 minutes using a toothpick or a knife

As I cant eat oats I made these with flaked millet. They are pretty good . I made small one which is good as they are a bit heavy. I had to drink a lot . But they will be ok . Next time I think I'll make them with half millet and half sorghum or something , I could even grind the millet flakes . I put chopped apricots in too and some sweetener ( xylitol ) . K

I tried this muffin recipe and it came out beautiful and tasted even more 😋. I love how I can be creative with this recipe and add my own ingredients next time I am trying cranberries in this instead of chocolate chips! Highly recommended.

Made it for breakfast today .... There's a huge bag of oats lying around so tried this out. It is tasty gotta say. Some changes I made....I used quick oats, I added two TSP of sugar, I just blitzed the dry ingredients the previous night and left it in the blender...blitzed the wet ingredients in the morning poured it and put it in the oven! Since the muffins don't have oil or butter, they tend to stick to the paper cup if you're using any. The chocolate chips are kinda necessary if you don't want to have bland muffins. Also, I made a small batch so keep an eye on the time coz they could dry out after 20 min. But overall, great recipe. Thanks :)

I've made this recipe at least 5 times. It's great. But I find the oats alone to be a little too plain for me. So I stirred in more chocolate chips, added walnuts and chia seeds just for kicks. Love it. Also, I think one or two more bananas are fine too. More tasty. Quick n easy snack. My hubs loves it! Thank you!!

Same here. I also use chopped seedless dates, sultanas, cranberries, and toasted chopped almonds as optional additions. Instead of the cinnamon, try pumpkin spice as well. Great 'base' recipe.

I just made these. They are really good and of course healthy! My bananas were over riped but muffins still needed to have much more sweeter. I used a little bit of honey too but apparently it wasn't enough haha. Overall, liked the recipe and will make it again, but next time I'll add lots of honey in it 😋

Making this today with +EXTRA CINNAMON +2tbsp GROUND FLAXSEED +1/2 CUP CHOPPED Walnuts +1/2 CUP ORGANIC RAISINS *And NO chocolate chips* This will be a perfect 'whole food' desert/snack! I made them before, as the recipe states, in mini muffins too. So good! Using whole muffins this time. Also, DONT FORGET THE SALT! it really enhanced the flavor! I used pink Himalayan

Sounds great. I remember a similar but my Grandma used some applesauce in lieu of some of the milk with berry's and small chunks of butter on top before going into the over. Oh, the memories. Thank you.

Hi Dany , I tried this muffins today ! I didn't have the cup cake tray so baked it in a cube shaped cake pan ! I required about 2 cups of milk instead of 1.5 as you mentioned ,also in place of eggs I added clarified butter ,2 tb spoon ! The texture came up to be good and crumbly ! But it took longer to get baked , about 45/50 mins roughly ! After it cooled I cut them in bar shape. And it turned out to be yummy !!! Thank you ❤️I am sorry if I mispronounced your name ! 😁

Love the recipe I revised it slightly. 1) added vanilla extract and 2) add 50% less sugar Cranberries that has high fiber count 3) used no sugar chocolate chips from kroger

@@merahdinero3774 mhm. I would use some. I used rising flour so I didn't need it. But, yeah. Baking powder definitely, and consider raising the sugar level of this muffin because 'whoo that thing tasted like biscuit.'

I made mine with 4 frozen bananas and it was too moist so I added an extra cup of oats. I also used the nature source salad topper in it instead of the chocolate chips. It has pumpkin seeds, sunflower seeds and dried cranberries. It also made 25 cookies.
