Almonds are packed with healthy nutrients and considered as superfoods. These almond balls are great for dessert, after school & pre/post workout snacks.
Ingredients for 12 balls:
1 cup (150 g) almonds
2 tablespoon (16 g) roasted white sesame seed
1/4 teaspoon (2 g) sea salt
3 tablespoons (45 ml) maple syrup
2 tablespoons (30 ml) coconut oil
1 teaspoon vanilla extract
Coating: 3 tablespoons (24 g) roasted white sesame
1. Add the dry ingredients (almonds, sesame seed, salt) in a food processor and blend until combined.
2. Add maple syrup, coconut oil, and vanilla extract. Blend until combined.
3. Scoop 1 tablespoon of the mixture and shape it into a ball.
4. Coat the ball with sesame seeds until completely covered.
5. Place on a plate and refrigerate for 30 minutes until firm.
6. Serve immediately or store in an airtight container in the fridge until used.
NOTE: I use raw unsalted almonds that are steam pasteurized. They are available at grocery stores or Amazon in the US. If you are unsure about the almonds in your area (pasteurized or not), please use roasted almonds that are unsalted.
