My wife and I are on the carnivore also, and found that grinding beef heart with the other meat really enriches the ground beef and provides a lot of extra vitamins and minerals.
We just did this for the first time too! Bought a 1/2 a beef from a local farmer. Grass fed, grain finished. I was so lost as to what cuts of meat we should get, but the butcher helped me out tremendously. For reference, we picked up the meat in November and still have quite a lot now in June (family of four). In hindsight, I would have opted for more ground beef as some of the cuts take longer to prepare (I felt ambitious at the time and wanted to “try” them....chuck roast, short ribs, flank steak etc). The taste is amazing! One other thing to mention is that this is expensive and not accessible to everyone. Having an extra freezer is a requirement. We paid $1400 for the 1/2 and then $300 to the butcher. Hanging weight was 334 lbs. Best meat I’ve had though and will do it again for certain.
We've been buying our beef like this for a few years now, best way to go. We also take the liver, heart, kidneys and tongue for our dog. The bones make excellent broth 🥰.
Soooo good!! We are blessed to have an uncle that pasture raises organic beef and it is THE BEST beef. I would go back to anything less than that. Great to see another farm and all of those tomatoes!!!!! OMG.
Is this normal lol, I'll never forget when I was in around 8 years old, my dad and my uncle showed up around 10 pm one night with a whole steer in back of my uncles truck ready to be butchered, my mom was livid lol, but we all got out of bed and set up tables in the basement and that's the night I learned how to butcher a steer. Normal I don't know, but lots of good times!

We have a steer hanging right now, at our meat processor. We took him in on Tuesday and he will hang for 2 weeks before they begin to process him. I'm looking forward to loading up my freezer.
We just picked up our 1/2 steer last weekend. It is our second time buying bulk meat. Last time we bought a 1/4 steer and a half of a goat. Probably next time I will just buy a whole one.
We’re going to pick up our 1/2 cow next week! In our experience the taste is totally incomparable to the grocery store. I know that heating system! My dad built something similar for our house and even hooked up our domestic water to it so in the winter you could take a 2hr long shower, run the dishwasher, and wash a load of towels and the water will only get hotter!
We have through the years boughten quarter of beef. Usually the hind quarter. Since we moved to Fl in a furnished home we do not have a freezer large enough. At the price of steak and roast this is the way to go. Did you get the bone for bone broth? I think i will get a freezer and find where we can get grass fed beef. Now you can really follow the carnivore diet without having to run to the store for meat.
Thanks for the video as we are thinking of purchasing our beef using this method. We normally by our meat from a local commercial store. Last August we went in with some friends and bought a whole bison direct from the farmer. We ended up with a quarter of the bison and it is a lot of meat. We had to buy a new freezer to store it all.
Hope you got some marrow/meaty bones with that half cow order. Best and most mineral dense part of the beef, is to make bone broth, to help reestablish a healthy microbiome. You should see how far and where I all drive to, to get the good stuff. I'm classified as weird and peculiar
wait im a little confused, can you clarify what type of steer this was or if there was out of the ordinary circumstances? how does a cow weigh only 600 pounds at butcher date?
Hanging weight goes down considerably after the entrails, hide, head etc are gone. The beef probably weighed 800 to 1000 pounds at time of butcher and a loss of 40% after the afore mentioned parts the amount of beef for a half beef would be 300-400 pounds. I buy a 1/2 at a time too. I have 7 boxes full of meat... I suspect this guy is butchering yearlings
I think what you guys do should become normal for everyone! It's been hard finding farms that sale meat like that around the dallas area. Lot's of places sold out.

I think grass fed beef is going to be more expensive than the store but it is much better for you and a better quality meat in taste and nutrition. I'm just saying that because we raise pigs and it costs a lot but the taste is worth it! We don't make any money raising pigs but it is sooo much better than store bought.
So some folks are wondering what breed of cow this came from. Yes that's important as to how large or small it will be. But hust important how old. I feel the best meat deal with cattle is buying a spent dairy cow,put her on good pasture, slaughter and split the cow with friends and neighbors. Fyi, that cow will probably be the best beef you have ever eaten. 🐄
