To get the "milk" to coagulate you need divalent cations (in this case Calcium ions from the lime stone). Magnesium ions also work. Calcium from gypsum also works.

If you add lime water to your batter mix or deep fried snacks it will stay crispy longer. Also, it'll help keep deep fried glutinous flour hold it's shape better.
From what I've heard they initially used wood ash and later on used lime. I wonder if the reverse could be true and you could use wood ash to make these recipes...

@@merlita8707 It is not the same. Slaked lime water is calcium hydroxide. Lye is sodium hydroxide, aka caustic soda. The latter can be used in cooking but only in very small amounts and cannot be consumed on its own without causing severe burns to the mouth and throat.

If you are wondering what the stone is called it’s gypsum , Gypsum is a soft sulfate mineral composed of calcium sulfate dihydrate, traditionally Chinese people do use it as tofu coagulant
@@DarkMage501 There is archeological evidence of lime being used in foods and construction 20,000 years ago. We have known about the strong alkaline properties of lime for a long time. Humans most likely discovered this by accident through the transfer of hot rocks in order to boil water.

@@Fizzing-Amperage I was refering to the fruit preserve spoon sweets. They dip them in a mixture of limestone powder and water in order to achieve a crunchy texture.
She is not eating stones. She is extracting limes from the stones, using the powder to make limes water in order to make tofu. Limes is rich in calcium mineral. It is safe to eat.
That was soooo cool to see, especially how the stones puffed up! When she used the water, that was the ah ha moment for me, cuz we use limestone water to make cendol. 😋

Тофу делают только из сои,а это рисовый пирог на пару.в Китае одно слово может иметь много разных вариантов, поэтому в заголовке написано не то что показано в ролике.

salt is also a rock but we break it down similar to this. of course salt adds flavor whereas lime doesn't, but it does improve the texture of flour based products. it probably started as some traditional medicine type thing rather than just, "lets nibble on this rock and see what happens!" lol.
