In my country we have something similar, is called melcocha, you basically boil panela (dehydrated cane sugar) and when you put it in water and it doesn't dissolves (it becomes like a flexible dough) you take it off to a cold surface and star shaping it with your hands. You fold it until is almost white and then you cut it or shape it. You can add tocte too it, it's really delicious 😋 Your hands may hurt a little but it's completely worth it ^^
