Fry mustard , Bengal gram and urad dal 1 tsp each in oil... once mustard splatters add a cup of small onions , 4-5 red chillies , a sprig of curry leaves and quarter cup garlic and a small bunch of coriander leaves and a small lemon sized tamarind.. saute well and grind it...
For people who dont understand tamil language here you go, Vegetable oil if required quantity mustard seeds urad dhall chana dhall Dried red chillies Shallots garlic curry and coriander leaves salt to taste. in a pan add enough oil preferably gingerly oil or any oil of your choice.once it is lightly heated add red chillies and fry it for a min in a low flame.pls dont roast too much and make it black. then add chand dhall and urad dhall half a spoon each or one spoon based on the quantity. fry this until it color lightly changes. Then add onion and fry it nicely.. then goes with garlic add four of five pods if your quantity is not this much..then add few curry leaves, coriander and tamarind. Add tamarind based on quality. if you are going for less quantity than this add half the size of a small lemon and fry it along with this mixture..The more you fry it will give good taste .Make sure you it does not stick to that pan if it burnt it will not good taste..final comes salt. once this mixture comes to room temperature grind it .Dont add water while grinding, if the chutney is too thick not able to grind add little water.
