In this last vlog of our first series (we will be back in the next 2-3 weeks) we finish our Turkish feast (see the recipe below) and also indulge in a little bit of bazaar shopping too in the famous Arasta bazaar near the blue mosque

Etli yaprak dolması
Vine leaves stuffed with minced meat
These stuffed vine leaves are many a Turk’s favorite home-cooking dish. Unlike the classic zeytinyağlı dolma, which are rolled into long elegant fingers and served cold, these are short and stubby, and served hot in some of the cooking liquid, alongside tomato and yogurt.
Serves 4:
40 preserved vine leaves (yaprak), soaked in 3 washes of water for 1 hour each, or if you use fresh ones, blanched for a few minutes to soften
Filling:
12oz / 350g minced lamb (kuzu kıyma) or beef (dana kıyma), or a mix of both
1 small onion (soğan), finely chopped
1-2 garlic cloves (sarımsak), finely chopped
4oz / 120g long-grain rice (pirinç), washed, soaked and drained or medium-grain, not soaked
bunch of dill (dereoto), parsley (maydanoz) and mint (nane), finely chopped
1 tsp coarsely ground black pepper, 1-2 tsp salt
1 tsp tomato paste
1 tsp bell pepper paste (optional)
1 tbsp olive oil (zeytinyağı)
1-2 tomatoes (domates), skinned, seeded and cut into 1 x ½ inch pieces (keep the seeds and chop these too to add to the stuffing later)
½ carrot (havuç), ½ onion, a few garlic cloves and pepper corns to line the pan
Cooking liquid:
¼ pint / 150ml water
2 tbsp olive oil
Mix all ingredients for the filling in a bowl, except for the rice. Add (part of) the tomato seeds to the mixture for extra moisture (you want the mixture to be moist but not too liquid). Fold in the rice carefully. Lay the leaves on a flat surface (always with the shiny side on the outside) and place a little of the meat mixture at the top of each leaf. Shape the mixture into your desired dolma shape to ease the rolling process. Fold the sides over (no need to close them - remember: this is when you decide the length of your dolma and you want them to all be the same length) and roll the leaf up into a tight package (start pressing gently but surely already from the very beginning!).
In a wide saucepan prepare a bed of sliced carrot, onion and garlic, the stems of all the herbs used in the stuffing, the stems of the leaves, some peppercorns and if you have any, some meat bones. This serves both for aromatic purposes and so that the dolmas won’t stick to the bottom of the pan. Cover with a layer of (broken or small) vine leaves and place the ready dolmas on top with their opening facing downwards. They need to be tightly packed together so that they won’t open while cooking. Pour some olive oil over them and add some salt and the tomato pieces. Cover with another sheet of leaves and lots of plates or other weights to hold everything down. Pour the water over the vine leaves (if you do this before the plates are on top the dolma will float to the surface and open up). Cover with a lid, and cook gently for 40-45 minutes. Then rest for 15 minutes. Serve hot in their cooking liquid with the tomato cubes and some yogurt on the side.

In the USA stevia is a powder sugar in a small yellow packets, just like the pink a was saccharin. Loved the look of the food, I love the stuffed grape leaves.

I always wanted some 'carpet' shoes so I got some, love them and soooooo well made. I originally saw them on an english website for a FORTUNE and seeing that they were made in Turkey I contacted a shop on Etsy and had some made for a quarter of the price ! Have decided to get one pair a year, will be starting a 'shoe jar' !

We freeze shredded zucchini so we can have similar pancakes in January. I use less flour and more egg, pesto and parmesan and cook exactly as shown here.

I don’t know why I seem to end up watching these cooking videos just before lunch or dinnertime. Then I go to the pantry and scan the shelves looking in vain for Turkish delights. Same with my refrigerator. I stand with the doors wide open and nothing remotely strikes my fancy like those tempting goodies that Ollie and Stephanie are devouring. Oh well, looks like a quick peanut butter and jelly sandwich again. At least these entertaining and taste-tempting cooking videos give me plenty to dream about.

I do enjoy a cooking video! Thank you for creating this one. We have many Turkish restaurants here and the vine leaves are always a joy! If you look at a channel called Acre Homestead, Becky has a machine called a Freeze Dryer and she is able to preserve the munificent harvest of zuchhinis which she grows. Such a machine may be useful for you? Apparently freeze drying ensures a far longer shelf life than dehydrating. Thank you for the video!

Even in winter, a visitor can enjoy the cooking school and register for their food tours, the herb and spice market, and, why not, look at the lovely products in the Bazaar. Thank you Stephanie & Oliver ❤ Stephanie, I never thought doing the courgette dish (mujver in Turkish) in smaller bite size, but because of health concerns (fried) and especially because of laziness, I make a « gâteau courgette » in the oven … the taste is almost the same and it is quicker … the stuffed vine leaves and the courgette dish are two of my favourite dishes in Turkish cuisine …

I am currently in hospital waiting for eveving meal. (dont ask). However, where I live, irtually everything is at hand. So I lease Friday and will buy everything needed for these dishes. Keep part for a meal the rest deep frozen for later. T thing I know with certain foods is that flavours are enhanced. To current situation! Such fun! Looks delicious! you both did an excellent job! The chefs are such great teachers. Stephanie and Ollie are fantastic tour guides and certainly do make these journeys such a joy! Loved the shows and loved and chose, the blue and green, and then when you showed the pink ones, I knew that was for you! Might be hard to find a bag to match that one? lol But, with slippers you will not need a bag? Very nice store though and very tempting indeed.

Stephanie and Ollie I don't know if you've thought about this but you could look at which videos have higher views and then organize a trip where you take a group to some of the same places and I bet the spots would sell out fast! I've watched some other travel youtubers do this and they had a lot of fun. I'd certainly consider going on a tour with you two in the future.

Thank you to the lovely professional and friendly couple of Cooking Alaturka, and thank you Ollie and Stephanie for your charming, entertaining vlogs, I can't travel for health and financial reasons but I went to Istanbul in my 20s and I loved it, although for a single woman it was more challenging to travel solo in the 80s, I'd love to go there again one day x

Oh my goodness my taste buds are watering watching you eat the dolmatha, we have sometimes a tomato sauce with them, but mostly it is egg and lemon sauce we prefer, after the dolmatha`s have cooked in stock we take some of the stock and add egg and lemon juice, and then add back into the rest of the stock and gently swirl the pan around, that way it does not curdle, the dish is just to die for and we have crusty bread to help soak up the sauce

Omg I'd go nuts buying velvet and kelim slippers and boots! I'm a sucker for the old anatolian/ottoman fabrics, embroidery with tulips and pomegranats and trees of life (like Turkish and Indian Suzani). Oh and the haindpainted turkish tiles are so pretty, and I also love my Turkish hamam towels, especially for warmer weather. Love to see you cook good food, the zucchini pancakes will surely be a big hit at Lalande! 😋 You should have bought a Turkish mint plant or a fresh bunch to take cutting from for the garden. Turkish ans Moroccan mint is otherworldly, and not the usual kind you find in supermarkets in other regions of Europe!
