Looks so delicious mate. There only one place in Urumqi you can find Can Huang Mian. I will take u there when I go back to Urumqi in October.

The night before my wife makes Lahgman, then the next day ot becomes Boso they call it. basically fried Lahgman. a day old though is best, then fried with chilli sauce spring onion etc. Yes delicious and once started and the chilli kicks in you just can't stop eating it till it's all gone. The ingredients in New land China though are better. Pretty sure the flour follows the Persian path of using Spelt flour. Here in westernised countries it's different.

Trust me...it's amazing! :) Like I said, my favorite dish to eat in Karamay and one of the best in Xinjiang (in my opinion).

Xinjiang is Far Western, so as Tibet, do you plan to go south to Tibet though? Also in that very huge desert in Xinjiang, was there any people that settle there and have urban cities around? You should try seeing if there is any good culture inside the desert of Xinjiang

Thanks for the comment! While there isn't much in the desert of Xinjiang, there are plenty of small towns surrounding the Taklamakan and I've been slowly exploring them as much as I can ;) Its quite a distance to travel!

It is spicy, but you can order it without any spice. It has a unique taste that is hard to describe with words. You just need to try it yourself! :)

+Jeremy Cline Great question, Jeremy. The shop is run by Uyghur folks but I wouldn't really call it a "Uyghur specialty". I haven't been able to find this exact dish anywhere else in the region so I consider it a fun spin on a traditional dish (Uyghur Yellow Noodles).

+Jeremy Cline Not quite. The noodles are hand-pulled, which is similar, but it's a different kind of noodle altogether.

新疆土著來證明:這個是炒黃面,乾煸炒麪要粗得多。Abida是個維吾爾族工廠的蘇打汽水,味道像奶油冰淇淋。
