I hear ya brother. It is a shame the city is so damn dangerous now that you cannot even live there without worrying about getting shot or mugged or both.
Been living in Chicago for 4 years now and my favorite cultural thing is that you can go to any Hot Dog place and say, "I want a dog with everything," and it is dragged through the garden Chicago style. Or you can say "I want one with everything except onions," and they know exactly what you mean. It is by far my favorite way to eat a hot dog, and it feels like the best way. Glad to see people able to enjoy them in NYC!

Love watching these...I was a professionals trained chef for 23 years...the hum and rythym of a kitchen is music...and those who work the job know things the public does not...I miss it terribly. Kudos to ya kitchen rats out there..you're a rare breed.

Ah yes, one of the great meals of the champions of Chicagoland. Italian Beef Sandwich with hot pickled vegetables and sweet peppers, soaked in au jus, accompanied by a real milkshake and fries. Alternatively you get 2 Chicago All Beef hotdogs with the full garden mix, milkshake, and fries. Living in central Georgia I miss the food stand food of Chicagoland.
Is the person taking orders an employee, or an owner? They are a great hype man and use great hospitality phrases, "my friend" "thanks for your patience"
This is a genuine skill that most business owners do not possess. But the ones who do make you feel like part of the family every time that you step into their establishment.

Indeed. They were a little skimpy on the hotdogs. Those of us who love the Chicago style hotdog want the makers to really drag the dog through the garden! That pickle spear was way to thin! Lol!

Great video, thanks for preserving Chicago culinary history. Just a couple suggestions…..steam the hot dog buns and lose the ketchup. The seeded Italian roll looks amazing.

Being born in Chicago and living 10 miles from now. Nice to see they are making the style in New York but that is a small scale and not the quality that makes our food so good . Beefs are way bigger and hotdogs are more ingredients and longer and huge . Chicago food is the best in the world hands down. The world lives here so we have so much of all the good stuff. Sucks Goin out of town and usually getting crap that has no business my belly. Thats why I love having a kitchen out of town so I can cook my Chicago style food. Enjoy

Sorry, worked at 4 different Dog houses in Chicago growing up in Chicago. That ain't how we did it! It seems too sanitized and pristine On the Italian Beef, we tossed in the beef then tossed on peppers Then we dipped the sandwich once before we served it. On hot dogs, We just applied mustard on a straight line. Then tossed everything on top not lined up. The tomatoes, we did not use salad tomatoes. We used regular tomatoes cut into wedges. The Maxwell Street Polish is totally wrong. The Polish gets it flavor from cooking all the time in a big mountain of onions frying on the grill, not separately! Again one line of mustard not squiggly. If heavy on mustard then 2-3 lines.
0:15 ouch, Portillos sells the same hot dog for half that. I appreciate that it is a mom and pop restaurant and I would definitely give it a try if I was there.
@@betokendollcrotchorourke6007 I ordered there Chocolate Cake to go, boy we had cake for a week, yummy. I will not be trying the chocolate cake shake, way too rich. Funny our Portillo's in Ca does not have mustard, you have to get the tiny packs, I have complained countless times, still the manager refuses.
Who dips french fries in that shake drink???? UGH!!! What a way to ruin a cold drink. But the rest is wonderful to watch. Each hot dog is a little creation. LOve the attention to detail in this shop. I love the dogs nestled in those wonderful boxes but they leave the fries out?
I like how they put the most meatiest, fattiest piece of meat inside that baguette - and then they cover it with all sorts of vegetables to make the whole thing look as healthy as possible :D
I live in Denver, we have this local Chicago style hotdog joint. One lunch day, I was there when a customer walked out talking to the old lady behind the counter, telling her she didn't have to be rude and nasty. I've been there only three times and I've heard talk shit to customers before. I just wanted my Chicago and hurrying to get out.
Presentation, packaging, and the dude at the counter doubles the price of an otherwise chuck and go masterpiece I get at any Guido shop in Jersey! Marketing is everything!....and all the QUESTIONS at the counter??!!! lol....."Come back when you're ready! Next!!!!"
It very expense to do business in N.Y. Offering choices is more expensive and increases spoilage if customers don't buy them. The Cook is slow but is meticulous. When money allows it a Restaurant Cooking line should be installed. But some buildings are set up for that kind of Construction. I am involved in 3 Restaurants one is a Hot Dog Joint. Go Chicago Dogs!

Chicago's "Old Eastside" is the part of the Southside that butts up against the Illinois/Indiana line. I liked my dogs charred on the grill... YUM!
