My grandmother always used a pastry cloth when she made her apple pie dough! Aftef she was finished, she scraped all the flour and dough off off the pastry cloth with the side of a stiff metal spatula, shock it out outdoors and rolled her rolling pin up in it and wrapped it in a thick plastic material(open on the ends) and stored it away for next time! She was always careful, to never get it wet or it would mold! She had it all my life, and long before me! ( I was 23 when she died) Noodles looked easy to make and dry! God Bless!

That's exactly how we make pasta, just eggs and flour. My grandmother taught me. In this part of the year, the hens do not lay eggs for us, but they will continue in the spring

Never made egg noodles, so Easy! Measurements too. Our family grew up with dumplings, but they were actually flour/ water noodles. Can't make these without old memories:) Thank You!
I grew up making noodles like The Amish Cook recipe with my mom. We would always spend time making sure the dough was very smooth (no flour showing) and supple before rolling it out. We would argue some times as to the quantity we needed for our family of four--two eggs, three eggs? I always always wanted more, and finally, if I made them, she would let me do it. We never dried them growing up--just always made them fresh. It brings back great memories, and I looked through my Kindle books and found that at some time I bought The Amish Cook so I have that exact one!!! Yay for me.

Yummy! There's nothing quite like homemade noodles, Tessie! Especially with homemade soup, chicken, or beef stroganoff. And you definitely got it right --- they don't cost much at all to make. My grandmother used to make them a lot. I never actually watched her while she was making them, but I recall that she used to spread them out on clean newspaper all over her big dining room table to get brittle (the way you described). She made them in all different kinds of shapes -- from thick to really thin -- and even some that looked like a rolled up little "scroll" of noodle and others that were tiny 1/4 " squares. (I have no idea how she cut those so evenly!) Every time we kids went past the dining room table, we would "sneak" a noodle or two. They were delicious even before they were cooked! Now that I recall all that "noodle theft" I realize what a patient woman she was! She always pretended that she didn't "notice" those "disappearing noodles"! Even when there was a pretty obvious gap in the noodle supply along the edges of that table! 😀 Prayers for you and Chevy Man and the whole family as always, dear Tessie, and much love to the whole HT Community. Especially during these turbulent times "out there." All the more reason to try to make our own "plain" little homes into places of love, safety, and tranquility.

I have my mother’s tool for cutting several noodles at once. When we didn’t use that we rolled up the floured dough and cut slices off. Then unrolled on to a kitchen towel to dry.
Go Tessie. My grandma used to store her noodles in a new pizza box. She swore by it. Thought I’d let you know in case you ever run short on jars. See you tomorrow. 😉
That was a wonderful job of making 2 different types of noodles. I was wondering if you sorted them so you could cook both up and do a taste test on them in the future? That would be a cool video to see if there is a taste difference between them.
I've never made homemade noodles, you made it look so easy! Have you ever cooked the noodles the same day you made them (not drying them first). My husband told me his grandma always cooked her noodles the same day.

We love homemade noodles, the only store bought we use is macaroni or other hollow type noodle. Can I share a tip? Save your eggshells, dry them and crush. You can feed this back to your chickens (I know yours are at your daughters now) or in the garden. The noodle recipe I've used for decades has only 2 Tbsp of oil, it makes it easier to roll out. Have a blessed remainder of your week.
I make my noodles amish version except no water I did find if I kneeding the dough before rolling out made smoother. I use a pizza wheel cutter to cut. I also don't dry them I add them to a hot pot of brotbrot

I’m thinking of try to make noodles after watching. I liked the look of the dough with olive oil. Ok, Tessie😸👁️❤️. I saw that you preferred not using the 50’s pastry cloth ? My mom in 60’s used similar ….. but yours was new …my moms was well used and it looked like it was totally oiled. I think you need to wash, dry then put in bowl with oil and let it infuse for a day. Then wring out oil put in bag for week and then wash and dry. It should look well used and oiled but not oily. I don’t really know but that’s what I would do. 🙏🐾😸❤️ Tessie…you know how to cook a thousand times more than me…… but ……your measuring of flour looked short……noodles. Ya, I don’t measure much any more, i eye ball and tweak later in mixing. Do you think this may have been the wet issue with oil recipe.? Would like a follow up on taste comparison😻🙏🌸
