Betty Groff potato bread recipe
Soft and fluffy potato bread made with a cooked mashed potato, flour, the cooking water from the potato and a few other simple ingredients.
INGREDIENTS
2 cups water
1 ¾ cups cubed and peeled russet potatoes (about 1 large or 2 medium potatoes)
¼ cup butter, cut into small pieces
1 ½ teaspoons salt
4 ½ to 4 ¾ cups all-purpose flour
2 packages active dry yeast (4 ½ teaspoons)
2 large eggs
INSTRUCTIONS
In a medium sauce pan add the water and the potato and bring them to a boil. Reduce the heat, cover, and simmer for 15 or so minutes or until the potatoes are very tender.
Drain the potatoes but RESERVE 1 cup of the cooking water.
Place the potatoes in a small mixing bowl and mash well. You should have 1 cup of mashed potatoes.
In a small bowl add the cooking water, butter, and salt and stir to combine.
Let the mixture cool until it is about 120 degrees.
In a large mixing bowl or the bowl of your stand mixer add 2 cups of the flour and the yeast.
Add the water mixture to the bowl and stir until well combined.
Add the eggs and mix until well incorporated.
Mix this wet dough on medium to medium high speed for 3 minutes.
Add the mashed potatoes and stir to combine.
Add the flour, ¼ cup at a time stirring well after each addition, until a smooth dough forms.
Knead the dough by hand (for 6 to 8 minutes) or with your mixer (for 5 minutes) adding any more flour you might need to form a nice dough that is moderately stiff but is still smooth and elastic.
Shape the dough into a ball and place it in a greased bowl, cover with lightly greased plastic wrap (or a beeswax wrap) and let rise until doubled, about an hour.
Turn the dough out onto a lightly floured surface and divide the dough into 2 even pieces.
Cover the dough and let rest for 10 minutes.
Prepare 2 loaf pans (8x4 inches) by greasing them well with butter or shortening (I find that cooking spray doesn't release the bread as well).
Shape each piece of dough into a loaf and place them seam side down into the prepared pans.
Lightly sprinkle the tops with a little flour and place a clean dish towel over the top.
Let rise in a warm place until almost doubled (30 to 40 minutes). I generally let my loaves get 1 inch above the rim of the pan before I bake them.
Preheat the oven to 375 degrees F. and bake the loaves for 35 to 40 minutes or until the bread sounds hollow when tapped lightly.
If they are getting too brown before the cooking time has passed, cover the tops lightly with foil if needed.
Remove from the oven and allow to cool in the pans for 5 minutes before remove them from the pan. Let them finish cooling on a wire rack.
They slice best when they have had time to cool though the warm bread is worth cutting into in my opinion.
NOTES
This bread is SO soft and fluffy. It makes the best sandwiches, toast, or eaten warm with butter and honey or jam.
Raisin bread same recipe just added raisins and cinnamon and rolled it up

I live fantastic on 25 dollars a week! I've done this since 2021 as a test to see if I can live on Social security. Yeppers it's doable if you don't have debt and own your own home.

I'm 69 I quit working 3 years ago living on Social Security only I try to keep it at 60 to 70 dollars a week that includes gas for my car and food. I do enjoy dining out two or three times a week buying senior/ kids meals or using coupons ( not giving that up ). Even while I was still working 90% of the meat I eat is bought on markdown 10% sale never full price and I'm always looking for other markdown or clearance food and non-food items. Not everything is close dated but you do need to keep an eye on expiration dates and rotate. I buy ribeye steaks, roast, lean ground beef, chicken whatever I can find. I shop thrift stores and occasionally garage sales for all my clothing except personal items and as much household items as I can find

I often make Irish potato bread if i have left over mashed potato . I think your husband would enjoy that . Its just potato, a little flour,salt. Make a dough ,roll 1/4" thick rounds,bake on a griddle, cool. Fry when its time to eat 😊

Great job! Sometimes people do better budgeting if they can "see" the end result. The $100 challenge might need to be bigger for most, but at least they realize if they go over one week, they need to reign it in the next week.

I have a old Betty Crocker recipe for refrigerator potato bread that comes out light and fluffy every time. It’s a family favorite! It’s the first thing I thought about when you said how expensive it was to buy it. But Tessie, you were already ahead of me! Yours looks great too.

I buy our bread at the outlet store which is so much cheaper. Its bread thats been taken off store shelves due to being out of date but still good. We use some and freeze some 😊

That bread you make will taste so much better than store bought. I understand though, cause I buy the great value creamer for my coffee and it lasts me about 2 weeks at about $4.50. So it’s about $9.00 a month. 😊 For me that’s my one thing I’m willing to spend a bit on, cause I make coffee at home and don’t go get the expensive coffee shop coffee. 😊

I can relate to this. Since college, I’d spend a money on buying coffee out multiple times a day until I was in my 30s 😳 I decided to buy a preowned milk frother and I’ve enjoyed my homemade coffee ever since 😊

Andrea, You are in for a treat when you try potato bread!😋 I personally have not tried this perticlal recipe. I have made a potato sourdough bread. I was gifted a starter years ago. Unfortunately when we moved, my husband through it out, thinking something was bad in the fridge.😢 Have not been able to locate it anymore.

I have a recipe my grandma made for a really good potato bread. I've been making it for 50 years. 5 # of flour makes 10 - 12 loaves. I also use the bread machine recipe and bake it in pans in the oven now that arthritis has settled in my hands.

Hi Tessie! I love this challenge. We make our own butter and buy fresh cow's milk. A pound of butter is so expensive. But! I'm buying a gallon of milk, for less than that block of butter would be in the store. It's a winner! I get fresh milk, cream and butter. It's just hubby and I, so we don't go through nearly as much butter as when we had a house full. I love homemade breads.

I’m doing my best to spend 150 per week for food, gas and a few items like shampoo, stamps, or other incidentals. Thus far I’m pretty close and it’s fun. Driving one third less helps a lot. The big challenge is rent!!

Now granted these things are not bought weekly just ever so often. We are loosing so many of our good thrift stores here they are just closing. Thanks Tessie for inspiring us all to be more frugal. I think you're off to a good start, Tessie! Now comes the "crucial question!! 😀 What did hubby think of your homemade potato bread substitute? Was he okay with replacing the store bought version with it? (It looked wonderful from this side of the screen! 😀 ) You're right... that would save you quite a bit of money if the $4/loaf option could be eliminated in favor of the home baked option. If you're able to get eggs from "the girls" who are boarding at your daughter's house -- wow! Those would be inexpensive breakfasts! And delicious too! Fuel is a tough one! It's not easy to come up with a replacement for that. (Not unless we want to go back to horse-drawn transportation! And that opens up a whole new set of challenges! I don't think we want to go there at this point. 🙂 ) You have such a well-stocked pantry, though. I believe you can do this! And you'll still be able to make meals that taste great. Thanks to the fact that you have been planning for these types of situations for a long time now. You and hubby are definitely up to the challenge! Blessings to you!

Thank you so much as you see in this week I did not spend the $100 but some weeks it may be very hard for me because we have a vehicle that takes a lot of gasoline but we don't go away very often so that helps it is quite a challenge for me but we will see and tweak it a little bit maybe it won't need that much but we'll have to see

During the depression, people kinda had their own little things they would come up with. Tomr a friend is helping me and I will pay him, he needs the money and I need the help! My dad and his brother put electricity in a town. Can't remember where. And my brother and dad did the first automated bread system for a bread company..someday I'll find out which one

I top off my gas when it gets to 3/4 tank. Then it's not such a big chunk of money to fill up. Living in the country, I like to have a full tank if I can

Because of where we live and how far my husband has to drive to get to work and back 5 days a week it costs well over 100.00 just for gas. Close to 140.00 actually. Mind you I am in Canada and its rural with no bus routes here where I am. So I am glad this works for you I truly am. If the costs keep going up without paycheques to reflect the costs of inflation it will not be worthwhile to even drive to work any longer. This is where a lot of people are being pushed to.

I used to make honemade cinnomin raisein bread, a favorite of my son, now an adult& on his own. As a teen he coukd est the whole 1pound loaf of store bought as a snack!

I wish I could say $100/week would be sufficient. Unfortunately between my husband and I we have to spend more than that on prescription medications alone. These are medications we can’t arbitrarily decide not to take. My husband has epilepsy so there is no choice. Gas is high too and my husband has a bit of a drive. Nevertheless I am trying to reduce spending.

I would suggest if you have $100 budget but have some left over. Keep that leftover and roll it over to the next week. Keel doing that. This way, if you have a week where you for example have to get gas for both, you won’t be stretched too thin for toilet paper, food, etc.

I love hanging out the laundry., I get to be outside in the fresh air a d sunshine i also have to cut a piece while it's hot and put butter! Breadmaking was very interesting.

I save both time and money making bead in an inexpensive bred machine from Walmart. The last time i checked they still sold a full size machine for about $50.

Fyi any d tightwad gazzett uses arefridgerator dough pre 1950 betty crocker to have fresh bread,rolls as needed.

You're doing great. That bread looks so good, even the one you said needs to be bigger. I bet it tastes fantastic! I also love that blue plaid shirt you were wearing. Very pretty! Beyond my other expenses, I usually spend far lass than $100 a week on groceries. I'm mostly a carnivore diet, and it's not that pricey since I look for sales. Those weeks when I need toilet paper and other Items, my grocery bill adds up to more, but I try to stay under $300 a month. It's a challenge. As far as gasoline goes, I'm in California so it woudl be almost $100 to fill my car. I never fill it, just $25 at the time. Thanks for all you do!

Under $300/mo is impressive in CA! In CA I have $400/mo budget including gas, household goods etc. but aim to spend much less. When replenishing TP, foil, wrap, trash bags etc. it takes a lot of the budget as I look at cost over time and buy a bigger quantity for overall savings. Gas, food, utilities, housing, taxes...all is super pricey here so being frugal is smart and a necessity for me.

A ELDERLY lady BOUGHT many many cans just dog food at dollar tree. I said to her your dog must be very. HAPPY. She says i dont have a dog. This what i make meatloaf out of for me my husband. So SAD!!! ( Horse meat ) Cheaper than doing with out proteins!!

I live on one hundred a week includes, groceries, car gas, mower gas, dog food and supplies, house hold and laundry supplies and even have take out lunch once a week. I try not to use the entire hundred so maybe the next week I can have take out twice. Great video Tessie.

I love this video! Im thinking of participating in this. Ironically, my hubby prefers that bread too and here in VA, it’s almost $6 a loaf. I do not but every week. I did happen to go into a local grocery a few weeks ago, and they had a rack of marked down bakery items that were about to expire. I bought 3 loaves at half the price (I think was 2.54, or thereabouts) and froze them.

Tessie, you can save even more money by eliminating all the added ingredients. You can simply steam the potatoes, mash them and make them into bread - you can add rosemary or garlic. No extra added stuff that's not that healthy anyway. Save money and saving on your health. Rosemary Potato Flatbread Ingredients: 2 lbs potatoes, roughly chopped ½ tsp onion powder ½ tsp garlic powder ½ tsp paprika ½ cup cassava flour ⅓ cup potato starch, more if needed 2-3 tbsps chopped rosemary Directions: Add 3 inches of water to a medium pot, insert a steaming basket, add the potatoes, and cover. Steam the potatoes for 20 to 25 minutes until soft. Remove the potatoes and place them in a bowl or pot together with the onion powder, garlic powder, and paprika. Mash until smooth. Set aside for 10 minutes to cool. Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper. Add the cassava flour and potato starch to the mashed potatoes, and knead until you get a soft dough that isn’t sticky, adding more potato starch as needed. Place the dough on the prepared baking sheet and spread out evenly to about 1⁄2 inch thick. Sprinkle the rosemary on top and press it in slightly. Bake for 25 to 35 minutes until browned on top. Cool for 15 minutes before slicing. Tips: Feel free to swap out the rosemary for a different herb if you’d like, such as thyme, parsley, oregano, or sage. Serves 2-3

Hope your husband likes your version of potato bread - it sure looks good but then all of your breads look delicious. I think I would have another solution for the potato bread though, and you can probably guess what that would be ☺ Not sure why you butter the tops of all your loaves - not doing that would save you a chunk of butter each loaf and less work washing the cloth you use to cover it. You could save a little egg white when you mix up the bread, beat it in a little cup with a fork and brush that on the top of the loaf with a basting or paint brush before you bake it if you want your bread to look shiny. You could also mow the lawn less often and fill your car's gas tank when it's down 1/4 tank instead of waiting until it's almost empty so it doesn't eat up more than half your budget in any given week...my word - that's too much. Or at least save any extra you didn't spend out of the $100 and put it toward gas. Ok, going to mind my own business and am sending you a hug.

I'd love to know what hubby thought of the bread for his breakfasts? I know you cook often for your children but maybe instead of purchasing items for those meals you make things using just your pantry/food on hand. That would be great videos, use of just your food on hand and save money etc.... If it is absolutely something you don't have for your family meals ask your children if they have it or can provide it etc....that again is a great idea for videos and also a great way to keep costs down. Since you're doing the cooking etc...I'm sure your kids wouldn't mind pitching in. Looking forward to seeing how the bread sponge thingy goes....kinda sounds like a starter!

He loved it I need to tweak the recipe just a little bit to make it a little more like store bought most of the food I cook for my children are from my pantry but I needed little odds and ends like sour cream and milk and dairy products which helped add to the meals

You know how it is when you're starting something new there's always trial and error so far it's been holding out really well for me but once our vehicle needs a lot of gasoline in it that will be more expensive and some weeks are a little harder than others
