As kids we use to get excited by knowing our mother is soaking chickpeas in night, the shear thought of having our family's fav meal "chhole-bhature" next morning filled us with joy & happiness. My mum use to prepare the masala at home and did not support store brought ones, just like you made it. Your attention to detail in ingredients, the process gives me hope that our old recipe would not disappear. Loved the pindi chole recipie with all the tricks and tips never shown before by anyone... like the dry amla and pomegranate seed a must in the masala. Thanks for the recipe. Healthy version: there is absolutely no need to add some much ghee at the end (you can add 1/3 and you will get almost the same taste). Also, there is no need to fry the onions in the oil. If you mash the onions and tomatoes in the blender and add that to the chickpeas, they cook very well (just take a bit longer) with almost the same taste. We need to be careful about Aradhana (pomegranate) seeds, a bit more by mistake and the taste changes completely, so need to add in increments (while tasting simultaneously)
It was amazing i tried this recipe i didn't had the dry amla i didn't get the dried anardana till the end and I cooked it in another kadhai not the iron one and I also don't have kashmiri lal mirch because at home we make the red chilli powder masala mixing all different types of chillies so I used it instead but the bhature should be fried on high flame continuously is very crucial things and it worked very well for mine here and there but still the recipe of both chole and bhature was a hit it was soooo amazing and thank you so much for this amazing recipe chef sanjyot keer ❤

This is the best amritsari chole I have made. Thank you for the chole masala recipe too, it's delicious. Bdw I used mustard oil instead of regular oil and didn't add the bag of spices when pressure cooking the chole. It still turned out great. And dark color to lohe ki kadhai/pan use karne se hi aa jata hai.

I made this recipe .. and the expected color was indeed there, even though I didn't use an iron kadhai. But the chole tasted a bit bitter - maybe I added a little extra ajvaaein before onion. So I asked my mumma and she said, ajvaaein before onion can be totally avoided. Rest it looked scrumptious! 😊

And now I made it at home and believe me the test is same and I also prepared that pyaz vala chatani which you taught in stuff nann video. I loved the detailing you have mentioned in your recipe. I swapped the regular onions for white onions, adding to the flavor, and used crushed green garlic for a slightly more pungent flavor.
