Here's how to make the modern Tiki drink, the Ancient Mariner, which is made with Dark Jamaican Rum, Demerara Rum, (or in this case, a Navy Strength combination of the two), Lime Juice, Grapefruit Juice, Simple Syrup and Pimento (Allspice) Dram. This version is served in a Cthulhu Tiki mug by Shima Ceramics and with a Voyager Swizzle Stick from VanTiki. Jeff “Beachbum” Berry created this drink as a result of trying to recreate Trader Vic’s 1940’s-era Navy Grog.
Beachbum Berry is a tiki historian and the proprietor of the tiki bar, Latitude 29 in New Orleans. He spent a good amount of time trying to find the recipe for Vic’s Navy Grog, but couldn't get the exact recipe.
So, Berry broke it down and recreated it by taste. This wasn’t an easy task. Berry was no Vic Bergeron, the founder of Trader Vic’s, who supposedly reconstructed and reworked the flavors of Don the Beachcomber’s Q.B. Cooler and turned it into the Mai Tai ( • Mai Tai - How to Make ... ). Vic’s wine critic friend said he “was a marvelous visionary. He had superb taste. He could mentally taste very, very well, and then translate those ideas into reality.” Berry, on the other hand, was a mere mortal and this took a lot of trial and error.
The name of the drink is not actually an allusion to, The Rime of the Ancient Mariner, but rather an flippant joke of how long it took Berry to create and perfect this drink.
I interpreted the name differently and was inspired by the H.P. Lovecraft story, The Call of Cthulhu. In my version, the Mariner is sailing perilously close to the Ancient One.
The Cthulhu mythos and the tiki world intersect a lot. Cthulhu lay resting in a previously undiscovered island in the South Pacific. A lot of his earthly worshipers live in New Orleans, the birthplace of the founder of Tiki, Donn Beach. And those same followers worship a stone carving of the Ancient One, in other words, a tiki.
This Cthulhu Tiki mug is made by Shima Ceramics. Shima is a ceramicist and bartender from Northern California. The metal swizzle stick (aka the Voyager) comes from VanTiki. Together the Cthulhu Tiki Mug and the Voyager Van Swizzle combine to create a darker interpretation of this drink.
Trader Vic’s remix of Don the Beachcomber’s original Navy Grog ( • Navy Grog - How to Mak... ) only really varied in the use of sweetener. Don used honey. Vic used Simple Syrup and Pimento Dram.
Pimento Dram is a rum-based, allspice liqueur. It is a really dominating flavor. Even in this measurement (0.25 oz or 7 ml) it really overpowers the other flavors in the drink. So I recommend only using a teaspoon (5 ml) of it.
As for the rums, Berry calls for a blend of two rums, a dark Jamaican rum and a Demerara (Guyanese) rum. For the Jamaican and Demerara, I’m using a Hamilton Navy Strength, a blend of the two. It is “60% Guyana rum at 154 proof and 40% Jamaican rum at 170 proof” and are slowly blended and stirred “for 48 hours before dilution to 114 proof.” This blend is not the 50/50 that Berry’s recipe called for, but like the Navy Grog, it works wonders in this drink.
If you wanted to stray a little further, you could replace the rums with 1.5 oz or 60 ml of Plantation OFTD, it’s stronger than the Hamilton Navy Strength rum and is a blend of Jamaica, Demerara and Barbados rums, so the profile will be a little different. But it makes for a good Ancient Mariner. Okole Maluna!
Recipe:
1 oz (30 ml) Dark Jamaican Rum
1 oz (30 ml) Demarara Rum
0.5 oz (15 ml) Simple Syrup
0.5 oz (15 ml) White Grapefruit Juice
0.75 oz (22 ml) Lime Juice
0.25 oz (7 ml) Pimento Dram (I prefer 1 tsp or 5 ml)
garnish scored lime wedge and mint (or Voyager Swizzle Stick)
(I used 2 oz or 60 ml of a Navy Strength blend of both rums)
(feel free to sub the rums for 1.5 oz or 45 ml of Plantation OFTD Rum)
Add all ingredients to a shaker. Shake with ice. Pour unstrained into Double Old Fashioned Glass or Tiki Mug. Serve with a straw.
