Ancient Mariner - Cthulhu Meets Tiki: Beachbum Berry’s Remake of Trader Vic's Navy Grog

Here's how to make the modern Tiki drink, the Ancient Mariner, which is made with Dark Jamaican Rum, Demerara Rum, (or in this case, a Navy Strength combination of the two), Lime Juice, Grapefruit Juice, Simple Syrup and Pimento (Allspice) Dram. This version is served in a Cthulhu Tiki mug by Shima Ceramics and with a Voyager Swizzle Stick from VanTiki. Jeff “Beachbum” Berry created this drink as a result of trying to recreate Trader Vic’s 1940’s-era Navy Grog.
Beachbum Berry is a tiki historian and the proprietor of the tiki bar, Latitude 29 in New Orleans. He spent a good amount of time trying to find the recipe for Vic’s Navy Grog, but couldn't get the exact recipe.
So, Berry broke it down and recreated it by taste. This wasn’t an easy task. Berry was no Vic Bergeron, the founder of Trader Vic’s, who supposedly reconstructed and reworked the flavors of Don the Beachcomber’s Q.B. Cooler and turned it into the Mai Tai ( • Mai Tai - How to Make ... ). Vic’s wine critic friend said he “was a marvelous visionary. He had superb taste. He could mentally taste very, very well, and then translate those ideas into reality.” Berry, on the other hand, was a mere mortal and this took a lot of trial and error.
The name of the drink is not actually an allusion to, The Rime of the Ancient Mariner, but rather an flippant joke of how long it took Berry to create and perfect this drink.
I interpreted the name differently and was inspired by the H.P. Lovecraft story, The Call of Cthulhu. In my version, the Mariner is sailing perilously close to the Ancient One.
The Cthulhu mythos and the tiki world intersect a lot. Cthulhu lay resting in a previously undiscovered island in the South Pacific. A lot of his earthly worshipers live in New Orleans, the birthplace of the founder of Tiki, Donn Beach. And those same followers worship a stone carving of the Ancient One, in other words, a tiki.
This Cthulhu Tiki mug is made by Shima Ceramics. Shima is a ceramicist and bartender from Northern California. The metal swizzle stick (aka the Voyager) comes from VanTiki. Together the Cthulhu Tiki Mug and the Voyager Van Swizzle combine to create a darker interpretation of this drink.
Trader Vic’s remix of Don the Beachcomber’s original Navy Grog ( • Navy Grog - How to Mak... ) only really varied in the use of sweetener. Don used honey. Vic used Simple Syrup and Pimento Dram.
Pimento Dram is a rum-based, allspice liqueur. It is a really dominating flavor. Even in this measurement (0.25 oz or 7 ml) it really overpowers the other flavors in the drink. So I recommend only using a teaspoon (5 ml) of it.
As for the rums, Berry calls for a blend of two rums, a dark Jamaican rum and a Demerara (Guyanese) rum. For the Jamaican and Demerara, I’m using a Hamilton Navy Strength, a blend of the two. It is “60% Guyana rum at 154 proof and 40% Jamaican rum at 170 proof” and are slowly blended and stirred “for 48 hours before dilution to 114 proof.” This blend is not the 50/50 that Berry’s recipe called for, but like the Navy Grog, it works wonders in this drink.
If you wanted to stray a little further, you could replace the rums with 1.5 oz or 60 ml of Plantation OFTD, it’s stronger than the Hamilton Navy Strength rum and is a blend of Jamaica, Demerara and Barbados rums, so the profile will be a little different. But it makes for a good Ancient Mariner. Okole Maluna!
Recipe:
1 oz (30 ml) Dark Jamaican Rum
1 oz (30 ml) Demarara Rum
0.5 oz (15 ml) Simple Syrup
0.5 oz (15 ml) White Grapefruit Juice
0.75 oz (22 ml) Lime Juice
0.25 oz (7 ml) Pimento Dram (I prefer 1 tsp or 5 ml)
garnish scored lime wedge and mint (or Voyager Swizzle Stick)
(I used 2 oz or 60 ml of a Navy Strength blend of both rums)
(feel free to sub the rums for 1.5 oz or 45 ml of Plantation OFTD Rum)
Add all ingredients to a shaker. Shake with ice. Pour unstrained into Double Old Fashioned Glass or Tiki Mug. Serve with a straw.

White grapefruit is next to impossible to find. I live in Orlando Florida, and its no where.....which is crazy seeing they grow it in the state....a little digging and it seems the majority of the white grapefruit is being shipped to Japan...WTF?? I guess the chain stores have come to believe that everyone only eats pink grapefruit.

Check out some farmer's markets. They'll probably have Oro Blanco Grapefruits there. Yeah, it's a pain in the butt to find them in southern California too, even though it's grown here. But I've had great luck at farmer's markets.

I got those at a farmer's market, I think they tried to slip an oro blanco in there or something. Three had regular rinds and one was thick as a brick.

I just modified the Mariner with cinnamon syrup and used Smith and Cross for the Jamaican/El Dorado 12 for the Demerara. The cinnamon blended well with the all spice dram to make it seem more suited for Fall. This is heaven in a double rocks glass

Finally got around to making this one. Boy, is it strong. I think my adaptation will include a bit more citrus juice. I could hardly taste the grapefruit.

Just wait until you try the Navy Grog. It's even stronger. I'm surprised that it was citrusy enough for you. Were you able to get some White Grapefruit?

Distinguished Spirits yeah, its easy to come by here in southern California. And I didn't drown it with the pimento dram. Maybe it was the ripeness itself. I'll try again when in a day or two when these other grapefruits are a bit more ripe.

I find myself toning down the lemon on Trader Vic recipes, toning down the citrus on Beachbum Berry drinks (except for this one) and making the Beachcomber recipes to the letter.

I'm not sure I'm going to be able to get to that one any time soon. But it sounds like the 1950-2000 era El Presidente (basically 2:1 rum to dry vermouth) with an Olive for garnish. Swap the Curaçao for Angostura, and the cherry & orange twist for an Olive.

Late to the party I know, but I wanted to thank you all the same, this is an amazing cocktail, I could drink these all day, but really shouldn't hehe. All spice dram is a real issue in Canada though, simply unavailable, but with a bit of tinkering, we get by. Cheers

I started with the basic posted at Serious Eats. I've settled on Wray and Nephew overproof as the white rum. Kaiser Penguin's falernum recipe with the same spirit.

I'll have to give the recipe a shot, it looks really, really tasty. Of course, got to call out that epically sweet Cthulhu mug. Michele and I were in awe seeing it. And your ominous dark ambient soundtrack for this episode is a great choice. You should check out the dark ambient music label Cryo Chamber - these have 3 Lovecraft oriented dark ambient releases (Cthulhu, Azathoth, and nyarlathotep). Highly recommend. What's the difference between the pimento dram and Falernum?

Pimento dram tastes like cinnamon, nutmeg and clove while Falernum tastes like almond, ginger and/or cloves, lime, and sometimes vanilla or allspice. The pimento dram has a bit spicier kick to it which might make it a bit strong for this particular drink.

One is an allspice (pimento) liqueur (rum, allspice, sugar), the other is a little more complicated (rum, ginger, allspice, lime, almonds, sugar), but on paper, they are pretty similar.

Any reason to prefer Hamilton Allspice Dram to St. Elizabeth Allspice Dram?

It's cheaper first of all, $26 for 750ml compared to St. Elizabeth's $25 for 375ml. The price isn't the make or break it. It's the taste. It's really good. It's cloudy and there's big baking spice flavors as well as a little Jamaican rum hogo to it. Also, some bartenders recommended it. That being said, St. Elizabeth is the one the Cates call for in their Smuggler's Cove recipes. It's not bad by any means. I just prefer this one. And I've got a helluva lot of it in that full-sized bottle, so you'll probably be seeing Hamilton Pimento Dram in the videos for a while. (It's in Three Dots and a Dash, for instance.) But then again, I don't have too many more videos slated with Pimento Dram at the moment.

Hello again, I may keep you busy for the next few :D. I have a question, I have recently learned about the golden ratio 2.1.1 and understand it fully but I fail to be able to distinguish what is sweet or sour in some cases when looking at certain cocktail recipes. I think if I have several concrete examples I'll get it. So I 'd like to take this Ancient Mariner (on my list to be made) as a first example. Here, is the sweet part syrup and grapefruit ? Which I would find strange because of the nature of grapefruit, then for the sour I presume it would be the Pimento Dram and lime. I received my Pimento Dram liqueur but only smellt it but can't really understand why it would be a sour (OK don't remember much it was the end of the night after mucho cocktails). In fact I have researched on google a list of what could be used as the "Sweet" part but cannot find anything I just know Cointeau can be used as a sweet but would like to have more examples of sweet. I have another example, I made Chief Lapu Lapu and as I have both Passion Fruit syrup and Passion Fruit puree (cubed frozen) I decided to use 15ml of each so didn't change the ratio, hope I did good doing that o.O lol. . This one does not follow that rule (but my next video will). The Ancient Mariner is 2 oz of strong (rum), 1.25 oz of sour (lime & grapefruit), 0.75 oz of sweet (simple & pimento). I hope that helps.

yeah thanks I'll need a bit of time, grapefruit was a bit of a dark area, not sure now if other juices like orange juice are part of the ratio of sweet or not part at all. Possibly big drinks especially Tiki drinks maybe don't follow that rule either, I'd have to study the Zombie again to see if I find a ratio. The more concrete examples I come across the better I'll get it :D.... The Ancient Mariner was already on my list for the summer I only chose it for my menu because of the Rime of the Ancient Mariner song by Iron Maiden lol thanks again

I was thinking of another thing, we must remove all dessert cocktails out of the equation, they only consist of a strong spirit and 1-2 sweet liqueurs (ex. Bayleys, Chocolate, Mint etc...) or I have some with 3 liqueurs (no strong spirit) sometimes all of equal part and others with different quantities depending what the cocktail is about (more orange based or more choc based etc..). I think those types are probably more flexible
