Andhra Style Mix Veg
Ingredients
1. Kashmiri Mirch + red Chili - 2 nos
2. Methi seeds pinch
3. Black pepper - 1/2 tsp
4. Coriander seeds - 2 tsp
5. Channa dal - 1 tsp
6. Sesame seeds - 1 tbsp
7. Copra coconut - 2 tbsp
Method
1. Roast All ingredients with a bit of oil except sesame seeds till golden
2. Dry roast sesame seeds
3. Add oil and temper mustard seeds. Fry onion till golden
4. Add tomato and cook for 5 min
5. Once tomato is mushy add pumpkin
6. Add salt and cook covered till vegetables are tender
7. Grind roasted spices and coconut to a coarse powder
8. Add ground powder to cooked vegetables
