There are some two speculations regarding the origin of the name of ‘Andong Jjim Dak'(Andong-style Braised Spicy Chicken with Vegetables) - Some people say it is named by the outer side of the villagers seeing inner side people eating chicken in such a way, while others say that people in Andong created ‘Andong Jjim Dak'(Andong-style Braised Spicy Chicken with Vegetables)’ to confront the western style fried chicken. The dish with chicken diced into pieces, vegetables with good seasonings, and glass-noodles is just a perfect meal. You might be used to dark brown colored Jjim dak. However, let’s take out the artificial caramel color dye for our health this time.
[Andong Jjim Dak(Andong-style Braised Spicy Chicken with Vegetables) Ingredients] 2~3servings
-Ingredients: 1 Whole chicken(600g), 2 Potato, 1 Onion, 1/2 Carrot, 2 Hot green chili, 1 Red chili, 1 Green onion, 1/4 Cabbage, 100g Dangmyeon(Sweet potato starch noodles), 3tbsp Oligosaccharide, 1/2tbsp Sesame oil, Sesame seeds
-Sauce mixture Ingredients: 2 Dried chilies, 5tbsp Soysauce, 2tbsp Minced garlic, 1/2 tbsp Minced ginger, 1tbsp Brown sugar, 1/2tsp pepper
[Instruction]
1.Dip chicken in milk for 20 minutes to drain blood. Soak the glass noodles in cold water for 15 minutes. Blanch the chicken in boiling water for 30 seconds to 1 minute and rinse it in cold water. Then remove water with kitchen towel.
(tip. Soak the chicken in the milk to get rid of poultry smell.)
2. Grease a heated pan and grill the chicken until it turns to yellowish-brown color. Then rinse it again in cold water.
3. Combine sauce mixture ingredients in a bowl and mix. Cut potatoes and carrots into pieces with 2cm thickness. Cut onion into 3cm long squares and slice green onion and red chili at an angle. Put the seasoning, chicken, carrot, and potato in a pot and boil for 10 minutes over high heat.
4.When the potato is slightly cooked, add onion, cabbage and hot green chili, then simmer for 10~15 minutes.
5.When the cabbage is cooked, add green onions, red peppers, and softened noodles to boil.
6.When every ingredient is cooked add oligosaccharide, sesame seed oil, and sesame seeds and boil once more.

My mom and dad work hard every day to provide at least one meal for me, they make time to take me places, and they even buy me a gift when I score A's in finals. They deserve so much, and I wish I could get a job too so I could buy them delicious meals and take them to their favorite places. But I can't. So I decided to learn how to cook, that way they can come home exhausted or joyful to a nice home cooked meal, and rest. Today this will be my first dish. I’ve subscribed this channel since five years ago (back when there’s still no subtitles) because it’s aesthetically pleasing one to watch. And finally I have the courage to try this recipe last weekend and it taste so darn good! (I’ve modify the recipe by adding smoked paprika, replace cabbage with bit of rice cakes, modify the sweetness and boiled it bit longer for a thicker sauce) Thank you so much for sharing this amazing recipe ❤️

hello!!! I tried your version of the dish just now, and it tasted fantastic! The chicken is super tender, potatoes soft and flavourful, and soup goes really nice with the rice! And the glass noodles are HEAVENLY!!! ❤️ Only thing is the dish turned out a bit bland, cos i added too much water. But it’s still delicious and my family finished 80% of the whole pot in one sitting! Thanks so much for sharing! Love your videos!!

Soaking chicken in milk is to remove gamy taste. Blanche and rinse to clean Fry and rinse to get rid of unnecessary grease. I’ve tried all this before, and the flavors were really good. Though I didn’t make this dish.

@@niharikasoram6713 if you you're talking about marinating/rub, it seems like it's not needed. You can see around 3:50 they put the seasoning mix they made earlier in video with the vegetables

Andong Jjim Dak( andong styled braised spicy chicken)이라고 적는건 어떨까요? 다른 나라 음식이름을 말할때도 .. 예를 들어 텐동,,똥얌꿍 이라고 하지 뜻을 풀어서 부르지 않는것 처럼요.. 망치라는 한국인 유튜브 분이 계시는데요 미국에서 한식 채널 하시는데 고유명사 이름을 적고 뜻을 풀어 표기 하시듯 적으시더라구요^^외국인도 많이 보시는것 같아서 그냥 의견 남겨 보아요 ^

이게 동남아 음식이나 중국 일본같이 충분히 문화가 알려진 국가면 현지어로 말해도 이게 무슨 음식이구나 다 알고 있는데 한국 음식은 완전 생소하기 때문에 아무래도 풀어 설명하는게 맞다고 봐요 전. 현지 음식점들도 다 그렇게 하고요.

옳으신 생각입니다. 우리 이름 그대로 써야 우리 음식 안 빼앗깁니다. 일본이 우리 불고기, 김치, 닭갈비 들고가서 지들 이름으로 자기네 음식이라고 우기잖아요. 우리식 이름 그대로 써요. 그리고 김밥을 김밥이라고 하니 이제 김밥이 다들 뭔지 알아요. Rice wrapped with black sea weed 하면 우습고.. 누가 우리나라 음식인줄 알겠어요

이거 진짜 맛있어요! 생닭을 바로 다른 재료와 함께 끓였더니 물이 많아져서 그냥 덜 졸여진채로 먹었는데요 진짜 맛있네요👍👍 대신 생닭으로 하면 간장을 더 넣어야 하는 것 같네요! 좋은 레시피 감사합니다:)

Hi, may I ask why you have to rinse the chicken, twice? Is this for presentation (avoiding brown color from blood and skin) I like the recipe but is the chicken flavor not affected by washing?

em..sorry for this reply is not from wife's cuisine. I also rinse chicken before cook, and rinse again, after take it out from boiling water. This is not taking out well cooked chicken, just deep in for a minutes to get rid of blood

I understand the rinsing after the quick boil, but like @anastasia46 ‘s ..my question is she rinsed the chicken again after browning in oil...I only wonder about the chicken flavor this time...but Ireally do like the ingredients.

안녕하세요 양을 두배로 만들고 싶은데 양념도 2배로 늘리면 될까요? 재료를 2배로 늘릴 때 양념도 2배로 하면 양념이 너무 많은 경우가 있더라고요 요리 초보라 하기 전에 먼저 여쭤봐요~

Like many other Asian dishes I've seen cooked, it looks good when it's over. I'm sure it tastes good. I just don't understand the double chicken wash. Seems counter intuitive to wash away the good bits then add so many chilies you can't taste anything but them anyway. Oh well for people who like hot food I guess.

닭을 노릇하게 초벌구이 하고 만들면 닭 익히는 시간이 단축되고, 육즙이 빠지지 않아 더 맛있게 즐기실 수 있어요.

I am cooking a similar dish to this but using lamb shanks instead. My recipe takes 3 hours to cook with root vegetables. Then you add everything else at the end.

60대중후반의 안동인입니다.....안동찜닭이라는 명칭은 상인들이 붙인거 같지만 우리들 어린시절에는 긴 겨울밤에, 야식으로 당면넣은 닭찜을 종종 해 먹었답니다. 큰 토종닭한마리에 감자,양파,당면넣고,어린아이부터 노인까지 부담없이 푸짐하게 야식으로는 그만이었던 거 같습니다..다만 지금 식당에서 파는 것처럼 카라멜소스 이런건 넣지 않고 담백하게 해서 먹었던거 같아요.지금도 가끔 만들어먹기도 하지만 왠지 어릴적 그맛은 안나는 거 같네요....

why would you want to wash off the chicken after grilling it? wouldnt you be removing the natural savory fatness taste of the chicken when you do that...?

This an aspect of Asian cooking I just do not understand. It's also why they have to add flavor back into a lot of dishes with MSG and bouillon and soy sauces. There is a lot of boiling going on in Asian food too. Give me a good roasted hunk of meat. Smoking ain't too bad either.

@@ttjohns4821 : I'm Asian too (although not Korean) so that's why I'm asking why did she do that...Cuz I know I won't wash it back after perfectly grilling it. After some thought, I think it's optional... 💁

@@grapeseed3444 I assume they want the brown color on the chicken pieces but not the brown "bits" that come with it. I can't imagine it would add that much debris in the finished product.
