In 1975, the Nguyen family left Vietnam for America. As Andrea Nguyen recalls, her mother carried a shoulder bag containing a survival kit of family photos, instant noodle packages and a handwritten recipe notebook. Andrea explains how the book and its recipes were a critical way the Nguyens could hold on to their family history-and the history of where they came from. #TheFamiliesThatFedAmerica
Recipe for Bò Kho, a Vietnamese Beef Stew:
Ingredients:
- 2 1/3 pounds boneless beef chuck, well trimmed (about 2 pounds after trimming) and cut into 1 1/2-inch chunks
- 1 hefty stalk lemongrass, loose leaves discarded, cut into 3-inch lengths, and bruised with the broad side of a cleaver or chef’s knife
- 3 tablespoons fish sauce
- 1 1/2 teaspoons Chinese five-spice powder
- 2 1/2 tablespoons peeled and minced fresh ginger
- 1 1/2 teaspoons brown sugar
- 1 bay leaf
- 3 tablespoons canola or other neutral oil
- 1 yellow onion, finely chopped
- 2 cups peeled, seeded, and chopped fresh tomato or 1 can (14 ounces) crushed tomato
- Generous 1/2 teaspoon salt
- 2 star anise (16 robust points total)
- 3 cups water
- 1 pound carrots, peeled and cut into 1-inch chunks
- 1/4 cup chopped fresh Vietnamese coriander or Thai basil leaves
Instructions
1. In a bowl, combine the beef, lemongrass, fish sauce, five- spice powder, ginger, brown sugar, and bay leaf. Mix well with chopsticks to coat the beef evenly. Set aside to marinate for 30 minutes.
2. In a heavy-bottomed 5-quart Dutch oven, heat the oil over high heat until hot but not smoking. Working in batches, add the beef and sear on all sides, then transfer to a plate. Each batch should take about 3 minutes. Reserve the lemongrass and bay leaf from the marinade and discard the rest.
3. Lower the heat to medium-low, add the onion, and cook gently, stirring, for 4 to 5 minutes, or until fragrant and soft. Add the tomato and salt and stir to combine. Cover and cook for 12 to 14 minutes, or until the mixture is fragrant and has reduced to a rough paste. Check occasionally to make sure the tomato mixture is not sticking to the bottom of the pan. If it is, stir well and splash in some water.
4. When the paste has formed, add the beef, lemongrass, bay leaf, and star anise, give the contents of the pot a bit stir, and cook, uncovered, for another 5 minutes to allow the flavors to meld and penetrate the beef. Add the water, bring to a boil, cover, lower the heat to a simmer, and cook for 1 1/4 hours, or until the beef is chewy-tender (a sign that it is close to being done). To test for doneness, press on a piece; it should yield but still feel firm.
5. Add the carrots and return the stew to a simmer, adjusting the heat if needed. Cook, uncovered, for about 30 minutes, or until the carrots and beef are tender. (This stew may be made up to 2 days in advance. Let cool, cover, and refrigerate, then bring to a simmer before continuing.)
6. Just before serving, do a final taste test. Add salt or a shot of fish sauce to intensify the overall flavor. Or, splash in a bit of water to lighten the sauce. Transfer the stew to a serving dish, removing and discarding the lemongrass, bay leaf, and star anise. Garnish with the Vietnamese coriander and serve.

I came here looking for Bo Kho recipes. I wasn't expecting to hear such a lovely story. Andrea's retelling of her history is very eloquent. I'm sharing some of the same aspects with my family that she does with hers.

As a Vietnamese, I love her dish and her story about her journey and through the hardships of keeping the identity. My fav dishes are the Phở Bò (Beef Pho) as well as the Bò Lúc Lắc (Shaking Beef) and this Bò Kho. Wonderful video

The title of this video doesn't do it justice. What an excellent story, straight from the source. My cousins and aunt made it out of Vietnam with my uncle. They were so young they don't remember a lot of stuff and my aunt passed many years ago. Thank you for this awesome insight and for taking us along your journey.

what a beautiful story , i have many friends from Vietnam . we call each other family thanks for a roller coaster of emotions . all of my many Vietnamese families have there own story of escaping they country they love . best part for me the food they create when i visit thanks from a second generation american .. Go Andrea! It's so frustrating when ignorant foreigners and even Vietnamese people try to say our famous dishes are "a knockoff of XYZ's cuisine". They really try to say pho and bun rieu are French in origin!

Yeah, pho is NOT French origin as many Viets like to tell people. Not sure where that even began as there's nothing about pho that is really French as far as ethnic ingredients used. Maybe if you're reaching you can possibly say technique of clarifying the broth...maybe you can also say the beef pho since beef wasn't used as much, but it's not like the French invented cows. LOL! And bun rieu, never heard people saying that is French...obviously nothing French there. Banh mi uses baguette and some use pate (but many don't depending on the type of banh mi). But go to France and you won't find an equivalent...they keep it simpler whereas Viets have all the fresh herbs and whatnot that makes the sandwich unique. If people want to attribute baguettes to the French, fine...but the French didn't invent sandwiches, yet you don't see French apologists about the origin of sandwiches, bread, wheat...you get the picture. Viets just need to stand proud with their cuisine.

Working fo the refugee program from 1986-92 was a decision i made for myself- so rewarding, fulfilling... this video made me remember all those years.. i miss vietnamese food..

Everyone has that love for food that they grew up with. I'm 62 male and love to cook. I still cook some of my family favorites. I also modified some to be my own. I really enjoy eastern food.

Tried my aunt's Bò Kho today. She & her family stayed for more than a decade there. I always enjoyed her stories when Vietnam tried to stabilize itself as a country. Someday, I'll be able to visit Vietnam and enjoy all the fresh produce and food there. It's what I'm actually most looking forward to!

Wow, just wow!! What a wonderful story!! I am a food lover, always have been. I carry my grandmother's recipes in my head. Food is history, it is memory, it is as you say who we are. It defines us, it gives us all something in common. It gives us a way to share who we are and our experiences. Food for me has been a journey, a way to share the soul of so many others. To share histories and cultures. For me food is love. A gift from my grandmother, who is gone, but lives so deeply in my heart. She lives through my own hands as I prepare her dishes, she is present in each and every bite. I wish so much that she were here to journey with me. Her love of food was certainly passed to me and cherished each time a new bite touches my tongue!!

I'm spoiled by the digital age, I can't imagine it being hard to find a recipe for beef stew. Also, I can't imagine not just experimenting with beef stews until I made the one I liked.

Yes it is messy cooking, but I was always told by my mentors, if you’re not making a mess while cooking then you’re not doing it right! I’ve come to believe that is very much true! I love all Eastern countries dishes, could eat it seven days a week! Awesome Ms. Andrea

It's possible that Bo Kho is based on French Beef Burgundy which is a stew braised in wine.

I've seen it at generic grocery stores in the fresh herbs section but if it's not stocked at your regular store an Asian grocery should definitely have it. Depending how it's sold it might be too much for a single recipe but the stalks freeze well for later. You can also get it in paste form.

You can find lemongrass at the Asian grocers that cater to SE Asians. You might be able to find it at bigger Indian grocers (they usually don't use it in their food so much as they use it to make a tea, I think). But if you can probably get it Whole Food. Get a few fresh stalks, put it in a cup of water to let it grow a few roots. Then grow it in the ground over the summer so you can have a ton of lemongrass. Just cut off what you need and at the end of the summer, cut it all up and freeze it. They freeze well. :)

Speaking from a middle class point of view. Most Vietnamese refugees who came to Canada in 1979 weren't as well off. Her story is interesting though.

There is no comparison between French cuisine and Vietnamese cuisine. Vietnamese makes you want to eat it all the time. French food makes you not want to eat it because it is so expensive for just a little bit, and it isn't nearly as full of flavours as Vietnamese cuisine is.
