@@IngaLam not sure if it's comparable but it's pretty different. Maybe croissants from France, milk bread from Japan and red bean pastry from Korea. Or you could do croissants ,baguettes and sourdough bread from every country and see how they make it differently.
@@IngaLam I love the history of many of french pastries not using leavening agents and then Asian pastries developing from French techniques in a more avant-garde manner like the souffle pancakes and such. I particularly love the development of Portuguese pasteis de nata into the Taiwanese and Chinese egg custard tarts
I actually think a video about how you use the leftovers would be interesting. I know ✨I'm✨ cooking for one but not necessarily cooking from scratch/new every day and struggle with thinking of new ways to use my food. Leftovers Lam Style is a series I'd watch (and would be a good way to stretch the content!)
I live in Lyon, and we often see Paris as being a very fast paced city with often cold people and a ''meh'' public transportation. But seeing foreigners talk about it puts things into a more nuanced perspective.
Love how you mentioned that while you do feel very fulfilled, there are moments and days where you don't necessarily always feel like that. It feels a bit more normalizing the fact that working towards the things we want isn't the glamorous story social media likes to tell all the time - and I appreciate that down-to-earthness and genuine sharing w us. :)
I love the new format you've been trying out like with the pasta recipe videos! As a college student who just started learning how to cook on my own, I think these "trying out ___ food hacks" videos are such a great resource for me because it helps me discover new recipes to try that are very simple to make! What ideas do you have for this series in the future? I'd love to see one about eggs or even rice... 👀
I dont find culinary school* worth it, sort of. The best thing to come out of the experience is the connections to established chefs and through them, restaurants. For this reason alone, its a great launching point for a culinary career, but not necessarily better than just sending your resume to a Chef. That being said, everything they teach can be learned on the job and will be mastered through repetition. Straight out of school, most people will be tasked with working a single station (probably garde manger) for the next months or year. You will forget or get rusty with a lot of cooking techniques and will have to learn them anyway from the ground up to match the restaurants particular style. If restaurants are your goal, Its impossible to actually know if culinary school is worth it while in school. Only years later, so I always recommend to people thay they work in a restaurant for a bit to see what its like, before spenind 3k+ and 1-4 years of your adult life. *Pastry might be completely different and seeing the various techniques, styles of baking and nuances from a chef might be actually completely worth it. I'd imagine that going into pastry cold turkey would be really hard. If a pastry chef could let me know, that'd be cool.
I miss france and the bread there. Especially the baguette sandwiches. I'm so happy you got to go and take a bread course there. And I can't wait to see what you have for us this year

Inga, of course we would be interested in a cookbook from you. :) But you'd have to give yourself the room and time to do it, probably do fewer videos in between placing and recipe testing. So only do it if you can be forgiving to yourself of the changes it will mean for your workload. :) We don't want you to burn out over a cookbook. But I will buy it immediately if you do.
When I studied abroad in 2002, I found most French people very welcoming. The only abuse I got was when I traveled to Italy. There was just an assumption about Americans and a man decided to take all of that out on me. After that encounter, I told people I was Canadian

can i say culinary school is with it if you want to learn to cook so many different things i did it in my high school here in the us for a whole semester and i mastered quite a bit of culinary skills that im proud to have and im thinking about going all in for culinary school but it might also be a on and off thing for me as ill learn more things for cooking.
This was pretty neat! One question that I don't believe was asked was where you were living during this time you were taking the culinary school bread course. Unless Paris does it way differently, I've never heard of any landlords renting out apartments to potential tenants for only two weeks at a time - so where were you living while attending culinary school? I imagine it would be something closer to maybe a hostel if not a friend's place and chipping in for two weeks worth of rent while there.

would you ever go to school for other cuisines because imo french cuisine is kinda basic compared to south / east asian lol. (apart from breads ofcourse though i think even indian breads have a lot of variety apart from your normal naan, paratha and roti)
How fluent do you have to be in French to take a course like this? Would you not recommend an experience like this without having a strong grasp of the language?
Hey Inga, in your google maps snippet i saw that you have all your places marked with these blue squares. Did you know you can actually categorize them with emojis as "pins"? So like a coffee cup for cafes or a baguette for bakeries. Just FYI :) (only works in iPhone though, in my experience)
the nicest french people are the ones who don't live in paris! and the nicest ones in paris are the ones who don't deal with horrible tourists all the time!

When I went to Paris the people were rude and mean I didn't like it I arrived really late to a cafe with my friends and I didn't get anything and the guy taking my order was like why am I even there I should leave

the courses are taught in English thought most of the terminology we learnt was still in French! Chef also allowed us to take photos etc for personal use, which I greatly appreciated 🥹
