In the first episode of our “Ooni in Rome: Passion for Pizza” series, we visit Antico Forno Roscioli in the heart of Rome. A renowned bakery known for its high-quality breads and classic Roman pizza by the slice, their bakers cook super-long pizza that’s thin and crispy for patrons to pick up pizza bianca and pizza rossa to go.
Owner Pierluigi Roscioli heads up their collection of family-owned food venues around Rome, including bakeries, a restaurant and a cafe. We spoke to him at their bakery headquarters to find out why their Roman pizza is so delicious.

Our first trip to Italy, we stayed at Hotel Smeraldo which is directly opposite. We were instantly addicted and suffered terribly when they closed for a day over Easter. Now we only ever stay in that hotel, so we have quick access to Roscioli. We’re considering bringing a vacuum sealer to try and get some Roscioli pizza back to Australia. It would mean abandoning the machine in Italy because they’re 2.5kg but I’m thinking it’s probably worth it.

Is the place from the mid 17th century, or did his dad start it in the 1970s? Which is it?

Good catch! Antico Forno Roscioli was founded in 1972. However, their bread-making story is intertwined with the history of the city, as the original structure dates back to 1824. Tradition runs deep in this family, and it's certainly worth a visit if you find yourself in Roma.
