Learn how a chance encounter (involving an ice cream cone at the Las Vegas Pizza Expo!) led to the opening of the first Roman pizzeria in the greater Atlanta, GA area! This is the story of how David DeSantis and Jason Black came to discover Roman pizza, and what led them to open Legion Pizzeria in Kennesaw, GA.
Legion Pizzeria specializes in super high hydration dough, fermented for a minimum of 96 hours, resulting in pizza crust that is thick in appearance but is light, crisp and delicious. Al Taglio pizza means by the cut (or slice... or square). Legion Pizzeria has expanded on the typical Roman toppings by introducing ingredients that are more local and familiar in Atlanta, GA - bringing a new spin to Roman pizza al taglio.
This style of pizza was pioneered in Rome by Angelo Iezzi and the Associazione Pizzerie Italiane. Castelli Forni is the oven of choice to bake pizza al taglio, due to its powerful baking characteristics in spite of the ultra-high hydration dough.

I am also a chef in Austin doing pizza romana tonda. I’m glad you guys are doing al taglio. I was a chef in Roma for 10 years at glass hostaria. No one knows the two different Roman styles. Congrats to you. Chef bonci was a huge figure for me when I was there. I’m glad are in the south representing Roma together. Auguri!

What, just because it's square? Sicilian is more dense and doughy, it's heavier and loaded with more sauce and other ingredients. Roman style is crispy, airy, and lighter on the toppings. You'll get stuffed eating a Sicilian, but Roman style is easier to digest.
