Slaves created almost every tasty and delicious dish in the Americas: , Southern American soul food, Caribbean, Central America and South America. Their West African heritage allowed them to carry over the base seasonings of garlic, ginger and onion, plus herbs native to their lands and ingredients we use here in West Africa. They infused it with whatever was available in their new lands. ❤

@JoseTorres Yes, I cut them thin and on a bias (rather then small cubes) so that they get the most surface exposure while grilling. It’s a chef trick that makes the meat just as tender. Thanks for watching!
