I was just given a TON of granny Smith apples and told to "make something with them" been looking for the perfect recipe since I have 5 boys and I'm pregnant I didnt want anything too labor intensive. I dont know how I forgot about apple butter! My grandma and I used to make this almost every year and it was always AMAZING! Thank you so much for the reminder! I will be making this recipe very soon.

I'm going to try this. But quick question, is the apple cider vinegar just for tang/flavor, or does it help preserve the apple butter somehow? I've seen some recipes not use any vinegar and I was curious, and the blog post didn't mention a reason.

@@dbzcupcake This recipe can be done using apples; pears; bananas; peaches...basically all kinds of fruit! But make sure to cut down the sugar a bit if you're using something naturally very sweet like a banana or a very sweet kind of apple ^_^

First time I saw this video, I went directly to my kitchen to make a variation of this using what I had on hand: peaches. It was excellent. Today I have a surplus of persimmons--a homegrown gift from my neighbors--so I'm back to watch the video again before I use this method to experiment with creating Persimmon Butter. Thanks for the inspiration, Chef John!

Bonus recipe!: dice two granny smith apples into quarter inch pieces mix with half a cup of homemade apple butter then stuff inside your favorite dough and deep fry! We make these in the south and are amazing!

looking good chef john!! the one time i participated in making apple butter was in an enormous copper kettle (literally big enough to take a bath in) over an open fire at a reenactment of an irish fleadh. everyone took turns to stir it with a giant wooden spoon. i brought home a few gallons of apple butter to freeze, it was the greatest!

Chef John, this is my Mommie's apple butter. Only Granny Smith's, stirring this all day, only to be able to have it the next morning on cornbread. My favorite. You made me laugh and remember how much I loved being in the kitchen when she was making jams.

Did this today on stovetop, turned out great with 7 hours of cooking. Of course here in Finland I have never tasted Apple butter before but I think mine came out amazing. I'm thinking of doing a larger batch next week and saving some for christmas!

In Brazil we make something like this but with bananas. It's called bananada and it's heavenly on bread!

I'm going by what I remember my mother doing, but it also took many hours of cooking to develop a dark caramelized color. She'd turn it off and eventually get it cooking again to avoid burning. But I'm not sure bananas need as much sugar added. There may be recipes out there for "bananada" or banana spread.

Today is my birthday and this recipe was a great 🎁. I love to use this on a baked ham as a glaze. I only put this on the last 15-20 minutes of bake time and it always comes out perfect. I also add some clove to the spice mix it pairs very well with the ham. Thank you Chef John for your version of a recipe so near and dear to my heart.

We do that too. We make jelly from the peels and cores, and apple sauce and apple butter from the meat of the apple. Add some cloves to your jelly recipe for something truly mind blowing.

I made pectin and put the "mash" through a food mill. I cooked the milled mash into apple butter. I'm ready for grapes with all this pectin and ready for pork chops with this apple butter!

My trees had half a dozen apples this year and only two made it. I don't know if it's an off season thing or the late week of frost just before the blooms came out. It killed all my peach blooms except 3 dozen. Last year's apple crops were full of worms. Well, next year I will look forward to more apples so I can try some of these recipes.

Hmm, this reminds me I'm getting critically low on apple butter. I have generally bought it from costco as theirs is pretty good and I was too lazy to realize how stupidly simple this is. I think I'll see about making this in my instant pot. I probably can't pressure cook it, but fortunately it doubles as a really nice slow cooker. This is helpful since my crock pot died...and by died I mean I left the ceramic on the counter to dry after washing and my cat decided it looked better on the floor.

I don't have an IP yet, but my kid does and she loves hers. However, if you're interested in getting another crock for your pot, they're very easily found online. A super quick search had me looking at 25 options on crockpot's website. Not sure what brand yours is, but there's bound to be options for that model as well. I'm also so grateful I no longer have cats. Just sayin.

I found myself at a Waffle House one night and they gave me some cinnamon raisin bread with some apple butter on the side, it legitimately was a little life changing 😂 maybe it was my drunken sweet tooth but that slice of bread was on of the best “desserts” I have ever had Hope to give this recipe a try so I can experience an even better version of that meal 😊

Dear Chef I made this last Christmas and cursed the 15 hours it took to do so. BUT the result was so delicious I kept all I made and only gave (little) pots to very discerning friends. We ate it with goose and other cooked meats. I certainly hope to make it again Christmas next. One of the best things I have ever made.

Forth time making this today. Used fresh picked apples off my tree. 15 lbs and 3 seperate slow cookers. The house smelled amazing! 12 hours of cooking gets it nice and sweet. We jar these in 250 ml jars and give them away at Christmas with my wife's apple crumble recipe that uses an entire 259ml jar as the "sweetener"...that's it. I also have used this apple butter in Chef John's apple fritters recipe as a sub for the sweetener. You don't HAVE to pass it through the fine mesh sieve but it makes it soooooooo smooth if you do.

Very pretty! I make mine for Stack Cakes (Eastern KY...I don't know if it's a thing elsewhere...) & they're amazing. I usually start my apple butter using dried apples (one of my cousins is crazy & dries like half her orchard's apples), which makes the aroma even deeper! I'll remember the apple cider vinegar as I've always used lemon juice, that sounds like a nice change. Honestly, i've put everything from leftover wine to hard apple cider to rosewater in mine...it's always interesting. 〰💙 Great video, as usual, Chef. A reminder to start thinking about Christmas cooking sooner rather than later, lol

I made this but didn't time it well so I was bottling it at 3 AM....IT'S DELICIOUS AND I GIFTED SOME JARS AND THEY LIVED IT TOO!! I used Fuji cuz I had two bags of them. I didn't peel them; my husband used his boat motor (immersion blender), BEFORE HE WENT TO BED, and smoothed out the apples. I kind of wished I'd either peeled or strained, BUT when you eat it it on toast, English muffins, anything crumbly, the tiny peels don't matter. Mine came out just wonderful!! I'm planning on making a dozen more half pint bottles. Thanks for all your great recipes AND your sense of humor!! ♡ D

There is a lot of Pectin in the skin of the Apple. This helps make the Apple Butter more firm, and the skin also has a LOT of the flavor and nutrients. Leave that in there. :-)

I've made apple butter once. It cooked in my crock pot for 2 days before I declared it finished. Everybody loved it. I might have to try it again using this method.

I purchase apple butter often but I use it as an ingredient for a BBQ sauce. I had a friend, originally from TX, who made BBQ brisket that was to die for. He had his 'secret recipe' for his sauce which he would not give up. Well, long story short, I eventually got the recipe from him and the secret ingredient was apple butter! What a wonderful addition it is and I always get positive comments when I do BBQ for friends and family. I will definitely give this a try. Thank you!

The only reason it would be "healthy" is because it has fruit in it. But apples are high in sugar and then you add more so really no, it's not healthier to spread on biscuits than just butter. It's really good on biscuits if you're eating chicken fried steak though!

Watch many of your videos. My family has been making apple butter for over 100 years and have a method that uses zero sugar. We always used apple cider boiled down to a thick syrup. Then make apple sauce and add that along with spices to the thickened apple cider. The cider is the secret to strong apple flavor and the necessary sweetness.

I highly recommend apple butter with toasted cinnamon raisin bread. It’s good stuff. I make bread and apple butter every year and it’s one of the few food combos no one argues with me about.

Needed some Apple Butter. Couldn’t find in local stores. Followed Chef John’s recipe exactly but cut in half. Thought amount was too small for slow cooker so used my heavy bottom pot to cook on stove top. After 2 and 1/2 hours, AB was about peanut butter color so I ran it through my Vita Mix. Oh so smooth and oh so yummy!! Returned it to pot. Will cook on low until a deep brown. I am doing other work in kitchen so no problem keeping an eye on my pot of goodness. Bet it’s ready in another hour or so. Looks like maybe 1 and 1/2 - 2 pints. So didn’t take so long. Going to make some cheddar biscuits to test. Also saw an apple butter pan fried pork chop recipe that should be great. Thanks for your recipe Chef!

Eons ago when we'd go skiing in VT my mother always stopped at this tiny general store to stock up on jars of homemade apple butter made by the owners...unbelievably delicious, both in taste and memories! Great recipe for a rainy Fall weekend (with of course football...)

Coming from the south we always make apple butter once a year, we have 2 wine sap apple trees and make apple butter ever year from it. As tradition dictates our copper kettle has been passed down from mother to daughter for 5 generations. John this looks absolutely amazing and would be awesome on some big fresh Cats head biscuts

Great recipe, thanks for posting it! I just finished making it, using the aples from our own trees. So I cut back a little bit on the sugar since these apples are sweeter than Granny Smith. Absolutely delicious, very sweet still but amazing flavor!

My ex's mother would make apple butter every year and it was like a sign fall was finally here. I always wanted to make it, but didn't want to commit to peeling them all, apple peeler or not. Can't wait to make this now. Thanks!

I HAVE MADE APPLE BUTTER FOR YEARS BUT I HAVE NEVER COOKED IT THAT LONG. I HAVE GOT THAT DEEP COLOUR AND FULL FLAVOUR BY USING SPICES. I ALWAYS USE LOTS OF CINNAMON AND LESSER AMOUNTS OF ALLSPICE, CLOVES, NUTMEG AND SOME GINGER. IT IS DELICIOUS. I USUALLY USE SPARTANS OR MACINTOSH APPLES. I USE THE SAME SPICE COMBO IN MY PUMPKIN PIE ALSO AND ALWAYS HAVE RAVE REVIEWS.

I put orange zest and orange juice in my crock pot apple butter. And it is an essential ingredient in my bbq sauce! Also great slathered on baked chicken the last few minutes in the oven. Thank you for this video!

I cooked mine on the stove for 30 mins - then transferred to a 140 celcius oven for 3 hours. Faster and looked identical.

@@coolingwinds it's similar. I cook the pears in water and apple cider vinegar with a star anise. Then put them through a tomato ricer. Put the mash back in the liquid add 1/2 c sugar per cup of puree. Add cinnamon, nutmeg, and cardamon. Cook until thickened. I make pear butter on the stove as it's easier for me. Apple butter is easier in my slow cooker.

I made apple butter a couple weeks ago with apples I picked myself. I did it by grating the apples in the slow cooker on high for 8 hours. I got very dark and caramelized and I did not need to blend it at all. It was delicious!! :D

Sugars lose some of their sweetness as they cook, so we add more to bring it back. I think. I'm not an expert.
