To Make Aravana Payasam
Jaggery - 400 Gms
Ghee
Water
Coconut Pieces - 1 Cup
Few Cashew Nuts
Red Rice - 1 Cup ( 200 Gms )
Dry Ginger Powder - 2 Tsp
Method:
1. Take water and jaggery in a saucepan. Boil the water until jaggery is completely melted.
2. Turn off the stove and keep it aside.
3. Add ghee to a pan and roast the fresh coconut bits until they are golden brown in colour. Keep them aside.
4. Add ghee again to the pan and roast the cashews until they are golden brown in colour. Kepe them aside.
5. Wash the rice a few times with water and transfer it to a pan.
6. Pour six cups of water and ghee. Cover the pan with a lid and cook the rice fully.
7. Strain the melted jaggery syrup into the pan and mix well.
8. Add the dry ginger powder and mix it all well.
9. Add ghee, mix and cook until the mixture is s bit thickened.
10. Add the roasted coconut bits and cashews. Mix well.
11. Let it sit aside for 10 mins.
12. Aravana Payasam is ready to be served.
