Hi folks, the title says it all. Somewhere, I feel most new age restaurants do a great job in the looks department, the sort that makes you go 'wow' the moment you step in. But when it comes to matters of the plate and palate, well, it’s a different thing altogether. In most cases, it doesn't seem to live up to what one would expect to taste in fine dine environs like these, and especially when paying top dollar! Jack of all master of none. Specialization is the key. You can have a small menu, a small kitchen, fewer chefs, and less expensive to run and maintain if you focus on a particular cuisine. Nobody likes to read through long menus and decide. Win-win for all.

My Economics professor used to say, all these star hotels are about exclusivity and less about food. Recently In Morjim, Goa we had a fish and prawns thali for Rs 280, zero ambience but a clean place. The thali was way better than what we get in pricey restaurants here in Pune....

Thankyou for saying this Kripal Sir. I was discussing this exact matter with some of my friends. Especially these microbreweries that charge exorbitantly for small quantities of food and huge ambience. It's literally becoming the biggest scam of Bangalore . And all corporate parties by default are happening there , and everyone tries to book a place based on ambience only . Probably that's why food has taken a back seat and restaurant owners just focus on the ambience , and people go for the best looking place.

I totally agree with you Kripal. Restaurants and even diners are actually wanting ambiance experiences rather than sticking on the main agenda :food and doing it with excellence. I am glad you brought it out openly. Few food channels are candid about offerings of eating joints.

Totally agree with you! These are the things I can feel in many places, but surely time will tell the kind of restaurants for those who think the ambiance is more than food, particularly if the food is served without soul!

It's so very true. Even restaurants these days have been caught up with this FOMO culture because if they don't get on the bandwagon they too may get cancelled by the gen z crowd. Restaurants are all about the "Aesthetics" these days as more attention is given to the ambiance of the place rather than the taste and quality of food being served.

Absolutely agree with every word of your's Sir. Restaurants these days are all about ambience and hype. Very rarely we come across one which serves great food. We can count such restaurants with our fingers, so few are left. So as the saying goes, 'don't judge the book by its cover,' frankly speaking the less ambient ones that we can find in small towns and villages serve awesome food.

I still feel, small scale establishments, whose attention more towards food than ambiance, whose cuisine has developed from generations together - beginning with home style cooking, they alone are genuine towards Food these days!! Rest are commercial establishments whose focus is making money through outward appearance. Where as, the restaurants mentioned above, do make money no doubt, through their dishes!! Thanks for telling the hard truth Sir! ❤

So true , totally relatable . These days the whole concentration is on the ambience of the restro rather creating a masterpiece of culinary retreat . And I think these days as ppl are eating out almost every second day , more one of kinds of menu are getting lost or new creation is not there in dishes . Its more of the vibe of decor and interiors rather on butter chicken gravy varieties as experimenting with the tastebuds can be dangerous .

This is true for all restaurants throughout India and it is true as well for all other activities that we Indians indulge in. Quality and dedication is the last thing in our minds. We only want profits and we care the least bit about our customers. As for the food industry in India, the less said the better. We have become used to eating adulterated food and food that is mixed with carcinogens and other chemicals that are extremely harmful for our health. But no one cares because we all want to earn more.

Truly said. So much of importance is given to the ambience these days that the authenticity of certain dishes that have been relished for ages seems to be weaning off and I’m sure the pricing would also be on the higher side….thus becoming a deterrent for customers to patronise such places in the future.

In simple words taste and ambience are two independent entities. When one goes for ambience taste sincerely is not a criteria Taste on the other hand depends on the food itself and can be anywhere Lastly taste is also a factor of the state of mind and hunger level Like the old saying goes "Hunger is the best sauce" Therefore we should effectively not connect these two

New restaurants are like flash in a pan, get the social media going, get footfalls for few months, try to break even. Longetivity lasts with restos who serve food to come back to else its just a fad.

If you are age above 50 yrs then finding very difficult to get good food especially for dinner time! . There is no where not getting meals during night. Always need to depend on Burger, Pizza, Pasta which elderly people will not prefer mostly. We have to spend money and finally we have to adjust with one or two items in Three star ,five star restaurants.Especially for vegetarians difficult ! everywhere same menu routine. No local recipes options also !

I 100% agree sir. I like ordinary and basic restaurants. A restaurant who food to which you crave for and 1st bite of the food there takes your to the heaven. That is the place I would always prefer.

Kripal Sir yes what u r saying is the norm everywhere these days to put more money n energy towards the smbience n u r feeling this lack of punch in food more becoz u have been delving into the other end of the spectrum where the ambience is least bothered about n its mainly about good food n that too in a city like Bangalore where these types small establishment have attained legendary status .....if these large restaurants also start seving some specialities it will give complete experience to its guests 😊

Thank you sir for voicing out on this trend which is going on in today's time. The food should be given 1st preference then the ambience is what I feel as people will come for the ambience one or two times but if the food is delicious they will come more often. A decade ago we used to go to the restaurant based the taste of the food and it's price not for the ambience but noverdays it's become first ambience then food.

A restaurant should be a result of "someone knows how to cook some special food+someone wanted to serve it to it's audience the most special way" Few places these days feels like "look! Taj Mahal now has a food menu too!" I am a good cook myself, occasionally an item I make, I feel like more people should have tasted this. This feeling should be the noble motive behind any food place.

Kripal well summarized with current Gen Z opting for colorful restaurants but is the food great not sure as you mentioned is it the food or only the ambiance. In you current series in Food Lovers TV you have been visiting as Angel Investor to some small enterprises that are serving great food this is something that bigger or colorful restaurant's must catch up. No doubt they also have some signature dishes but we cannot really count while the MSME has few and you want to visit for their taste. Thank you for this great summary 🙂

Indian Restaurants in a nutshell: 1) Rolling shutter door = affordable price food in a plastic plate. 2) Glass door = same food in a ceramic plate but costs little extra. 3) Automatic glass door = same food presented neatly in a ceramic plate but costs way more. 4) Glass door opened by a Human with a bow= same food presented neatly in a ceramic plate with smoke, etc and lesser in quantity but very expensive.

Exactly 💯 true...If the food is good but Ambience and Aesthetics resembles a shanty with unhygienic surroundings...it's better for it to go out of business than providing service delivery in a untidy, unkept environment 🙄

Yes to a major extent it's true that the dining experience has shifted from food and taste being the central focus to ambience simply because there is in reality a large set of people out there who want to garner likes and following on Instagram regardless of what is being served. Fortunately I am one of your ardent followers and make it a point to visit your recommendations whenever I'm in Karnataka. So cheers to that!

Sadly that defines most of the restaurants now😢 Here in Pune, even the ones we used to love for their food, drinks & service have lost their charm post covid. As you rightly mentioned, majority people now seem to gauge a restaurant by how Instagram worthy it's more than anything else! Even the elaborate reviews with all the fancy terms you see for many of them don't give any sense of the "taste of food" but the aesthetics of it! For majority of diners, priority seems to be posting pics of the place and the food rather than enjoying the food & the experience, hence resturants seem to be focusing more on those aspects 😢

So true sir! Recently we happened to visit three other metropolitan cities in past few months and one thing we noticed is the quality of food in Bangalore is reducing. The importance is given for ambiance but there is no kick hitting in when we eat the dishes. We went to the most simple cafe in Mumbai and mind boggled by the taste and simplicity. Being a soul Bangalorean, I will believe we need to take our food game back to business. I hope the restaurant owners hear you and people in comment section🙏🏼🙏🏼🙏🏼

Absolutely agree with you 100%. Me & my husband have always valued good food over ambience as most of the time we pick take aways. We do enjoy good comfortable seating and restaurants that offer wholesome or hearty meals, but in many places, style is preferred over comfort. I guess with younger generation, they want more of wow factor infused with novelty, whereas I personally feel that as one starts ageing, you crave more familiarity. Nevertheless I certainly cut a sorry figure whenever anyone asks my where to eat, and I am unable to advocate much for my favorite eating joints as they loose out on ambience. Lucky for us, being a Bangalorean, we always have a good mix that caters to all our taste buds and pockets 😀 Be it Donne biryani, dose, paella or crepes, Namma Bengaluru rocks! 🤩

100% agree. It’s also about consistency. It’s not how it used to be, whole new generation of chefs who are not crafting their skills and owners are more about experience and charge you a bomb! I don’t think they are looking at retaining customers.

It is what it is Kripal. It’s more like inviting Instagram influencers for aesthetics shoot and rarely anything related to food. Taste is subjective depending from person to person but majority can agree that it’s not worth for the price and quantity/quality these so called European/American style food joints offer. And Spot on with what you said, there’s no that special feeling of going back to the same place again and have certain food again. It’s been 2years and I travel 40kms to Mallika Biryani because it’s just best in the business!! Now that’s how you gain customer’s attention..

They must be after the demographic that wants social media eye candy type ambience, as you said. Previous generations who didn't eat out often when growing up still place primary value on the food being really tasty.

I totally agree with you. Its quite hard to find that simple shack or even a good restaurant which have gastronomic innovation! May be thats why we dont have michelin stars by the street corner but only in handful high end restaurants beyond the reach on common man.

It's the same scene in Mumbai. The main thing is not everyone is a foodie. So it's more about the experience and the vibe than the actual food. Plus they have everything from Indian to Thai to Japanese to Pizza. It's a khichdi of cuisines and they do nothing well, everything is average.

Agree Kripal. Its more about asthetics than the food. Secondly foods are not worth the price which is paid. That is why still you find that humble restaurants though there ambience is not good but food quality has genuine out last these up market restaurants.

Kripala Ji you have explained it very clearly. I always give priority to hygiene and taste but seldom care for an Ambience. I have specific locations for specific foods. I get more disappointed by eating something that's not as it ought to be at an ambient rich restaurant where I am paying more for it's Ambience rather than food. For example a five star restaurant's Dum Biryani doesn't taste as good as my regular go to non five star eatery. We always remember the cost of food at Ambient Rich Restaurant than the taste of food as the memory. I thoroughly enjoyed this very insightful Vlog . 😊 You are not at all wrong,Sir. You hit the nail on the head No harm in giving importance and putting in all the efforts on the ambience of the place. At the end of the day, It's a restaurant and people come to eat good food. It's not a picnic spot. Top priority should be given to the quality and taste of the food. Top priority should be given to curating the dishes on the menu. We the people should not give patronage to such places which only concentrate on the ambience and not the food. That's fooling people.

I call these restaurants as Instagram restaurants. These restaurants are serving a niche which was missing before. These restaurants are for hosting parties, impressing guests and having a good time. Earlier, there was only 5 star hotels: Oberoi, Taj Windsor etc that could host groups for celebration parties and were beyond the reach of general masses. now these new generation restaurants are democratising such spaces. Food is a jewel in these restaurants but it’s not the crown jewel, food is another component in the mix that consists of: ambiance, looks, style, service location etc. Food in these restaurants are good, in fact very good, but it’s not authentic. Food lacks the nuanced charm of old restaurants like Koshy’s, CTR etc For food, I love restaurants that are true and authentic to their food and service, restaurants that remained the same over the decades. But such old fashioned restaurants are not ideal for hosting a birthday party. Imagine hosting a birthday celebration at MTR!

This is definitely what it is. I am almost always disappointed with the food in all these new fancy looking spaces. Some places put so much effort into presenting the food. Some others use complex techniques (purees, sous vide, etc) to make their food but in the process forget the basics of cooking. Fancy looking food but lacking in balancing basic flavours like salt, fat, acid, etc

I also think, with a newer generation of people making wealth, they have not yet had time to refine their palettes and therefore are easily wowed by something that looks fancy. There used to be a time up until a couple of decades ago when pizza was an item only eaten in urban areas by the rich. (Yes, this thought is a little elitist of me, I see that)

Let me put it this way - the ancient philosophy of a restaurant WAS *centered* ON food, and was opened by a chef/cook. the uber rich then had five stars to meet friends. today perhaps the uber rich outnumber the current 5 stars spots available. .today it is also opened by business people identifying the need that people would like to come together and that there is market for 5 star spaces. today people are eating out much more,/take outs celebrating small and big events so much more than 20 years ago and so the same owner will have 4/5 or 15 restaurants and the food may be going out (most likely) from the same kitchen. the guy who started shake shack once owned 22 restaurants including a indian restaurant in downtown NY where food was served French style - the premium cost was for the space which tucked around financial institutions.and a park across

Yes, it’s true, there’s a certain breed of new age restaurants that is run by those who may not be food centric in their business philosophy, but thankfully there still exist those whose restaurants are built around food with the aesthetics, ambience, service etc serving to complement and create a complete dining experience. As for the NY reataurateur you refer to, though I didn’t quite get the context here, Danny Meyer, I’ve had the opportunity to know of his restaurants over 25 years ago, Grammercy Tavern at Union Square, to Tabla, the Indian restaurant. The latter was helmed by the late Chef Floyd Cardoz, who incidentally was also the force behind the food at Mumbai’s Bombay Canteen. Which goes to show that although Danny Meyer was a prolific reataurateur, food was always core to this philosophy. With Shake Shack, he just made it more casual, but the quality of food was a key differentiator as compared to other fast food chains, and therefore the reason for its success over 20 years.

You said it! We live in the US now, from Mumbai originally, we come every year to India and also travel in India. We come hoping to find "our" food, food that has memories. It has become harder harder to find it wit every passing year. This is a sad situation. Social media has given us something good and a lot of bad. Food business is also suffering from the same impact, some good and a lot of bad. It is good to have a nice ambience and a good feel and vibe at a restaurant but why must that be at the cost of taste? Unfortunately, there will be a generation of people who will not know how our food really tasted. I believe Indian food has so much to offer to world cuisine, it is unexplored. I hope this is a phase and things change. There is a team of chefs/restauranters in Mumbai who have started a few restaurants(like Bombay Canteen, O Pedro) which seem to be the way forward. They have the cool vibe, instagrammy, while they have stuck to the roots with the food.

Everything is corporate like. Everything is process oriented. Chefs/cools are just a gear in a big machinery. So, it is hard have unique, l rememberable taste in food.

Its better to prefere regular daily food in small mess or hotel, weekly once in multi cuisine resturant for high class food exprnce, nd mnthly once in star hotels where average food taste with grand ambiance. Its reality of today food industry taste. 5star hotel dish can also get in roadside vendors with better taste, but many going for fancy experice.

Even the quality and taste of food have also degraded in metros. The sole aim of restaurants is to generate as much money as possible. People have made it symbolic to visit restaurants, and even after experiencing issues, not complaining about the same. In the next few years, this will become worse.
