It’s a fact of life, potatoes are a perfect food. Anyway you slice it (or fry it or mash it), potatoes are a universally beloved ingredient and a staple in cuisines all around the world. In today’s episode, we’ll see Brishti share Bengali Aloo Posto, potatoes and poppy seeds, with Vicken who’s given her his recipe for Armenian Sini Patates, pan potatoes with tomato gravy. I loved when Brishti mentioned that baharat is similar to garam masala. As an outsider to both of the cultures in this video, I thought that was really neat, and I never would have had any idea. The little moments where we find similarities across cultures are so cool.

The funny thing is 'Bharat' is also what Indians call India. Kinda like how Germans call Germany as Deutschland.

​@@rho992the spice mix they talked about is called बहारत not भारत. The word comes from बहार, the Farsi word for spice (or spring). This is a classic case of what linguists call false-friends.

@@netroy Farsi bahar (spring) is cognate with vasanta in Sanskrit and its daughter languages, vår in Nordic languages etc.

The seed supposed to be used is actually khus khus, which are white poppy seeds. They have a similar nutty flavour when soaked and ground but still not the same. Black poppy seeds are not commonly used in Indian cooking.

For potato poshto (poppy seeds) white poppy seeds is used. And no tempering as it subdues the taste of the poppy seed paste. No turmeric is added as well. Only poppy seed paste, salt, sugar (a pinch which is optional) & green chilli if someone wants heat. It is a very simple preparation & along with potatoes it is made of many other vegetables as well. This is how I have always seen it made. Black poppy seed is used most in North East India or parts of western India.

Favorite potato dish - my mom's mashed potatoes - sadly she did it all from memory, taste and feel and never wrote it down. I really like this video - Dr. Emily said to say Monstrum sent me.

The first potato dish is something I would like to try. The second dish has poppy seeds, and due to my job, I stay away from anything containing poppy seeds. I drive bus and subject to random drug tests, and poppy seeds can cause a positive drug test for illegal substances.

I do think many of ye would be surprised at the increased versatility & nute profile of chuño (freeze-dried potatoes) & other freeze-dried tubers can be a likened to those of fresh potatoes & devices products of them, kinda like how one would be surprised at that of hominy/mote likened to that of fresh or dried corn

Trying both Armenian and Indian Potatoes, love potatoes, here in Mexico we have Enchiladas Queretanas which are tortillas dipped in a guajillo chili sauce, fried and then filled with cooked, diced potato and carrot, rolled up and garnished with fresh chopped white onion, cream and fresh cheese crumbles but I eat them withouit the cream and cheese, and the Armenian potatoes, I'll veganize it with imitation ground beef made with walnuts.😋👍

There is an Indian dish.. specifically Sindhi dish.. called Aloo tuk which is smashed potatoes.. spiced & crisped

Allegedly the spice is called Baharat because it comes from India which is also called Bharat. Garam Masala is one of most prominent spice mixes that gave rise to the OG curry powder among other spice mixes. No wonder Baharat takes after it.

I've never met a potato I didn't like. But my all-time favorite is a fried potato sandwich on white bread with mayo and salt. Fried carbs on carbs... Yes, Please.

Yes French Fries are great! I don’t think I found a potato 🥔 dish I don’t like. I think my favorite is the potato gnocchi my Nonna taught me to make. Comforting and easy. Great episode, thanks Beryl 🙏🏻😃💕

I've never heard of poppy seeds being used in savory dishes, just baked goods (cake, muffins, bagels, etc.)

They're very common in Bengali Indian food as well as in the rest of eastern India. You can add the poppy seed paste to chicken curry too!

I'm a Bengali, and it's truly almost impossible to imagine a full Bengali meal without potatoes. And to think that potatoes aren't even indigenous to India. I don't really know when this Indian love affair with potatoes started, but now they are ubiquitous. Oh! and btw, aloo posto is a personal favorite.

Different sects of Hinduism or perhaps culture. I know beef is acceptable in South Indian states vs Northern Indian states is considered taboo to eat.

Sini patates is not in Armenian nor is it even an Armenian dish. The dish you're talking about originates in Syria/Lebanon etc. Please do your research, there are many other great Armenian recipes you could've featured instead.

My guess would be that the meatloaf shrinks a little bit while cooking, and then floats in it's own juices. So, you can probably just lift it out relatively easily. Alternatively, you could plan ahead and place baking paper underneath, but leave the corners exposed, so that you can grab them to lift things up. But honestly, I suspect that this is overkill and you really don't need to worry.
