Gordon Matta-Clark (1943 - 1978) was one of the most influential artists of his generation, and was also the brainchild behind the infamous BONE MEAL in 1971 at the artist-run Food restaurant in New York City's SoHo neighborhood. He served numerous bone-intensive dishes to the guests and then returned their leftover bones to the as necklaces.

As an art professor & professional I'm so grateful that you create such comprehensive and entertaining videos. Like, I've always liked GMC's work and the idea of FOOD, but only in an impressionistic way, this video really helped it feel real and meaningful to me. THX

Master and Expert because she is the most creative person ever! I was almost crying laughing for half of the video. I’m sure I paid them nearly a dollar in ad revenue for the amount of times I had to rewind and rewatch watch this video. Easily one of the best gems on here. Lol

I really enjoy the Art Cooking series. For some reason, the food bridges the gap between my mind and the artist's mind. I can watch you prepare the food and get inside their head a little bit better than, say, staring at a sculpture. Thank you for making these and sharing them with us! (also DFTBA for good measure!)

I just like these videos so much that even though I'm an ethical vegan, I enjoyed this one. Gordon Matta-Clarks' work is just so interesting, especially the cuts into buildings.

I found this episode quite fascinating. Something about how long it took to prepare all this, and about the bones themselves... There's a certain beauty somehow. And I say that as a vegetarian who's never even had food involving bones. Also liked seeing that the meal got eaten. I've wondered at the end of these episodes if the food was eaten and enjoyed by people.

We used to soak ptarmigan in milk to remove some of the gamey taste. I wonder if it has dual purposes, tenderizing and taste improvement.

Aha! My guess is that the milk soak step would be more important if you have frogs caught out in the wild, with a gamier taste than the farm raised frogs I found in the store. Thanks :)

I think out of all the eps in Art Cooking this's gotta be my favorite and the one I knew the least about going in to it. Every aspect is so good! The humor and the editing and the inbetween stories and the directions, it's all so thoughtful and fun and well dictated! I loved hearing about Food Restaurant and all that encompassed in it its life!

My mom makes tacos with soft tortillas out of marrow bones from our stews. Quite tasty. I don't know if that is a mexican thing though. So I guess I do not find this meal as weird (?) Loving the art assignment as usual ❤

I got strangely excited by the fact that we have the same olive oil. Also greatly appreciated "remove some of the stalks, but not so many that you seem like a crazy person." Very similar to my general cooking method of "ehhh that seems like enough." ;)

OMG!! I had no idea frog legs were still a thing! In Europe frogs have been protected for decades! However, researching just now I found out, that their appearance in European cooking is on the increase from Wiki. The article also describes the utterly disturbing way they are "harvested" - one of the reasons for this being banned in Europe! As for the use of bone marrow: Have you ever heard of mad cow disease? Now, not to be totally negative, you showed some nice chopping and jewellery-making plus the info about those amazing installations I had never heard of!

Not even mentioning that Europe is huge, but frogs legs aren't banned. France banned the commercial harvesting of them to protect numbers but they still import large amounts of them.

I love this video! It seemed like you had a lot of fun making it, I hope you enjoyed yourselves:) Not gonna cook this, but maybe one day you are going to make a veggie cooking video. In the meantime I'm just going to enjoy watching you, your meal looked delicious! I also like the idea of using as much of the ingredients as possible, I think in our society not being wasteful actually requires a lot of creativity and skill. To me this a reminder to keep working on recycling things and avoid unnecessary packaging.

I eat meat, but I generally struggle with boned meats, so this was somewhat more horrifying to me than the giant meat sculpture. That being said, I still really enjoyed this video, keep up the good work 👍🏼

Milk, because it contains fat, is a great solvent to extract not so wanted swamp water aromats. In Poland the same method is used to prepare fish. It makes them very delicate! Greetings!

Soaking in milk is usually done to any game meat to pull the gamey taste out.

I believe you soak the frog legs in milk to remove the "gamey" taste of the meat! I've seen people do the same with chicken.

This video would have been worth it just for the Bone Appetit pun at the end... ;) But it's worth a thousand times more with the amazing work of Gordon Matta-Clark (I have long been fascinated by his cuts), cuisse de genouille (mmmm, I haven't had those in years!), and any art that needs a Dremel to make has got to be good. :D

Hi! I saw you used curly leaf parsley. When a recipe calls for parsley its usually flat leaf parsley which is more flavorful and isn’t as stiff as curly. I might be wrong though, thanks for reading!

Technically, but there are different types of marrow found in different bones areas. The marrow eaten in this video is pink marrow, found in the hollow center of long longs (eg: legs)
