Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity.
We are a team of passionate bakers working in a historic building in downtown Mesa that has been converted into a retail bakery.
Everything we bake is long-fermented with our sourdough starter ‘Harriet’. Each product is artisan, crafted by hand, from the best local ingredients, with no shortcuts.
We bake in line with 13,000 years of human history, avoiding artificial processes and unnecessary ingredients. Honoring tradition and serving better bread for our community.

How is a full country sourdough loaf only 10 but a single almond croissant up to 7 bucks? I guess the demands of the market makes the price, good for y'alls!

A few notable points here: Our croissants are quite large. They are contain no commercial yeast and are leavened only with a sourdough process. This means they take 3 full days to make. Our fillings like the frangipane are completely scratch made. The components of a croissant like full European style butter are quite expensive. The process is very specialized and technical. Keep in mind that most mass produced croissants are not made with pure butter but rather a butter/margarine blend reducing the cost of that input by up to 70%. Nearly all are leavened with yeast reducing the difficulty significantly. Often, croissants are up to 1/2 the size whereas ours are easy to share. Often, fillings are pre-made by distributors whereas ours are made from scratch. The bread in our bakery is really amazing. We mill our own flour, the dough is long fermented and naturally leavened. That being said, you can’t really find naturally leavened pastries very readily, and even still they are priced for our market competitively.

If you did both yourself you will notice how easy it is to make a full loaf of bread compared to pastry. Bread takes almost no effort only time.

It takes time... Jon and Amanda had no clue how to even mix. Look at them now! Bringing bread back to our families in America and encouraging others around the world to do the same. I remember the first 200 plus loaves I scored... now my community says, " Nonna, they are too beautiful to eat!'😂
