Wish we had a high altitude bakery here where I live. Now that we moved on a mountain, this high altitude baking is all new to me. Well happy your bakery is a success. Enjoy the fruit of your labor.

It’s an Italian thing The crust literally caramelizes, which is historical. It kept bugs out of the bread, and gave (gives) a unique flavor
