Hey, thanks for the great question. For the oyster sauce, there are vegetarian versions, that use oyster mushrooms instead of real oysters. The fish sauce might be a little harder to find. The fish in fish sauce is intended to add an umami flavor. Finding a vegetarian alternative that uses seaweed or mushrooms would probably work for you. You could also sub the oyster sauce for hoisin sauce, and the fish sauce for a soy based flavoring sauce like Golden Mountain. Check out these links...
