Welcome to Fermented February 2024!!! Today I'm attempting my first 2nd Fermentation or 2F with my Kombucha! I often learn by trial and error and love to try new things so this should be interesting and rewarding!

I'm just as happy to see videos of failed attempts as I am the successes. Both are learning experiences. And it wasn't a complete fail, because you found flavors you liked. Thank you for the information and for participating in Fermented February.

My favorite second ferment is 1/4 t sugar, 1/4 t pumpkin pie spice and 1/4 t fresh grated ginger per bottle.

Bless your heart for showing us the real issues in trying new things. I made Kombucha for years before taking a break for a while. I always loved blueberry 2nd ferment. I just popped the whole berries in and let them ferment for about a week, then took them out and squeezed the juice out into the kombucha. I am wanting to try to make Kombucha again with more flavors. Thanks for inspiring me!

The fact that you put Failure in your description told me....I had to watch this. I'm a newbie. Know absolutely nothing about fermenting. I usually learn more from my mistakes than successes. Loved it! I'm sure someone will be able to help you out. Thanks again.

I’m a texture person too so I totally get it! I prefer to make kombucha with juice to avoid it. I failed the first several attempts so I’m so glad you shared your experience with us! I do have a few tips that could help. 3 days for a second fermentation isn’t really long enough to develop much fizz, I’d encourage you to go a week or possibly more. I don’t recall you mentioning how long your first fermentation was but that can affect the fizz, less than 2 weeks and it won’t have really developed what it needs to bubble and more than a month will diminish the sugar available to fizz. I usually use 1/2 a cup of juice which is more concentrated in sugar than the purée so I would try adding more. Alternatively pinch of sugar could help. More sugar makes more fizz.

Thank you for the fermentation video. Love the tote idea. I dont blame you for covering each bottle to protect your ceiling. My Nanna opened a bottle once and turned her kitchen ceiling tan in one spot. I wouldnt call it a complete fail at least it was tasty. By the way I love your ROOSTERS in the kitchen.🤗🌻

You chose great flavors for you second fermentation. I do agree raspberries would make a great alone flavor as well as a raspberry lemon flavor. Thank you for telling us where we can get a starter scobbie. It is in my shopping cart to purchase next week. Thank you for showing you are just human like the rest of us. Non-successes teach us the way not to do it. Successes teach us the way to do it. It is a learning experience. My grandmother told us all growing up the if you learn something once a day, it was not a wasted day. I try to live with that thought so that no matter how small the lesson is, it is always a winning day.

I add a dollop of honey to my second fermentation and fill my bottles right up to where the cap is. I also use fruit chopped up really small. It rarely explodes, but it’s nicely fizzy.

I am not so sure that I would consider this as a fail? It appeared to have some bubbles on top - maybe a longer time? I wonder if the cap of the fruit was to heaving that it wouldn't allow the ferment to continue? Just my wine and beer experience making me wonder these things. I will be watching to see what suggestions you get on this and what you try. This is such a special video to share. I love the overview of what you all do on your homestead. The reminder that community is of one of the highest values and failures are okay and what to think about doing with it......Just is warm and fuzzy for me. You will be staying in my rotation of viewing. I can't wait to watch your goat videos too. I enjoy real people, sharing real things! Thank you for being part of Fermented February!

On my second fermentations, I do it in a gallon jar. After about 7 days, I strain it and place it in bottles in the refrigerator. It helps with the texture tremendously. Also letting it go more days makes it more bubbly.

I'm a newbie so I'm sure I am going to have some failures or mishaps and yes it's all part of learning. I'm excited to be learning as much as I can before I start advancing in fermenting. Bottles like you have make it more fizzy when your second fermentation works. My daughter doesn't do texture so she runs it through a tea filter over ice before she drinks it. I like it straight from the bottle.

I pour it thru a strainer before drinking. Besides the puree fruit, it also removes a scoby if it started to form.

I love your little farm! I had a 5 acre mini-farm in central Florida for 17 years. Over the years I did a little of everything: horses, jersey cow, Nubian goats, rabbits, chickens, a Turkey, quail, pigs, & even a pheasant once! We had gardens (both successful & failures). We had peach trees. I’m now in a stage of life where I no longer have animals. I have moved into a stage where I’m learning fermentation. My favorite kombucha F2 flavor combo is strawberry/guava/ginger/pineapple. I hit the subscribe button & look forward to more videos from you!

🎉 I have done a second fermentation of kombucha adding a few slices of ginger and 1/4-1/2t of sugar per bottle. It wasn’t very bubbly either. I was going to try upping the sugar and possibly leaving it to ferment longer. Thanks for the flavor ideas!

There are no failures if we learn from them. I would say to make it in bigger bottles that you can burp and then strain it when you drink it. I've never made kombucha and not sure if I would like it or not. It was still a great video. Once I painted my apartment and then opened a suspicious can and it exploded all over my newly painted kitchen so I could feel your fear. Thanks for being a part of this collaboration.

Great presentation & I always learn. I found that fresh fruit second ferments quickly & always use strong fermenting bottles so they don’t explode. Thanks for sharing! 🤗🇨🇦 I leave my 2nd ferment out a bit longer in the winter & brown sugar works well in mine. I put a dish cloth over my lids when opening them because I do have ginger kombucha on my ceiling😅

I just started my second ferment this morning. I started my kombucha journey by creating my own scoby. I have a strawberry one and a pineapple one. I only make small batches because I'm the only one who will drink it.

Really appreciate your honesty on this one... as for advice here is my two cents... when I have done my second ferments I will use a 100% natural juice instead of a puree as I to do not appreciate pulp. I also usually will give the second ferment about 5 to 7 days instead of 3. Hope that helps. Wishing you a very Blessed day 😊

I don't know a thing about fermenting but am fascinated by this collaboration. I do want to try some. Your drinks looked so good to me. I drank kefir milk and water for a time but got away from it. I don't know if it similar to kombucha. I thought this was very interesting and appreciate you sharing your video. If you liked the taste then to me that was not a failure.

I have no experience with kombucha. So I definitely appreciate the failures as much as the successes. Failure is just a step on the path to success. Thank you for showing us your steps on the path. Now I'm not so nervous at the idea of exploring kombucha. Lastly, of course blackberry is excellent! It's my favorite! I love all things blackberry!

What a great job explaining how to do the second ferment, what's needed, the whole SCOBY deal, etc. This is not an epic failure! You loved the flavors!! It was probably just a matter of one more day to ferment, or a tad more sugar...if you liked it - it's a big 'ol WIN!!! XO

I made Kombucha once and failed because I forgot about it. I want to try again. Years ago, we used to make homemade wine. I came home from work seeing my mom and cousin cleaning up the kitchen. It shot up into the ceiling fan and all over the ceiling. What a mess!

I'm so going to start doing kombucha again. Id say just let it ferments a couple of more days to get the fizzy or put them in a warmer place. I think having them on the floor it wasn't warm enough. When opening the bottles set the bottle in a bowl and cover the top with a zip lock bag when opening. If it does explode it will go up in the baggie and right back down onto the bowl. No waste. I also find using frozen fruit works well. Ginger lemon and blueberry Ginger lemon are 2 of my favorites. Also I'm right there with you, I don't like the texture of the mnny scoby. I just use a little metal strainer when pouring over ice into a glass. I have the same bottles you used and it is difficult to get the fruit out. I also reuse store bought kombucha bottles with the bigger opening. I've never had an issue using them. Good job.

Mine never fizzed either but the flavors are awesome. My favorite so far is lemon ginger so now I think I’ll throw some honey in and see how that is. Thanks for the video!

I bought a little fermentation kit and a fermenting vegetables book. I have yet to use it because I’m afraid I’ll poison my family. Thank you for keeping it real. I feel if I watch enough of these videos I’ll eventually know lots and be brave enough to try.

I’m not sure if this is the “right” way to do it, but I have always left my second ferment on the counter and only put them in the fridge when they were done. They have been fizzy 100% of the time. I also strain out the fruit before bottling and putting in the fridge. I use the mashed fruit to make popsicles and they are delicious!

Kombucha seems a little intimidating to me at this point. I’m going to try simple ferments to start out. Thanks for sharing.
