In this video, I head out for riverside walk with Maggie, the big black dog, to work up an appetite for breakfast. We find a nice secluded, shady spot beside the river and set about getting a fire going to cook up a tasty treat. I was recently sent some Aboriginal Australian ingredients from my friends Hari and Alana, and this was the ideal opportunity to try them out - ribeye steak, seasoned and cooked over the fire, damper - a simple tasty flat bread and Lemon Myrtle tea - deliciously refreshing on a hot day!

Normally I make the Damper into a ball and cook generally cook it in a campoven which does make it rise a little more than yours did, but yours looked good too. To take the damper to the next level you can add onions and either grated cheese or dried parmesan cheese to the mix along with mixed herbs. YUMMY. Glad you enjoyed some of our good Aussie tucker. I love watching your videos. Keep enjoying life and stay safe. :)

If you want the best damper mix SR flour with a little salt and rub the flour with butter. Mix in milk to make dough. Knead for 10 mins place dough in Dutch oven and allow to rest and rise in a warm place for 15 mins. Deflate damper and let rise again for 15 mins. Cook for 20-30 mins. Voila!

This is not damper, though. It's an Englishman's version. Real damper is cooked in the coals and is like a giant, hard cake/scone. Great hot with lots of cold butter. You can even toss a few saltanas in for the sweet relief.

If you like dampers, I suggest what we call "biscuits" in the US. Made almost the same way, but cut into circles. Lots of recipes on the internet. When camping, I use a trick, just mix self rising flour and heavy cream, don''t measure, just eyeball it. Mix the dough in a plastic bag, then pinch off some roll it into a ball, and smash flat before baking.

Gotta pick those younger leaves from the lemon myrtle, otherwise they're overpowering & stong😋, there's a cinnamon myrtle too😍😋. Nice use of a wider-angle lens on the bridge to give that 'converging-lines' effect 🎥 , top of the weir shot was pretty awesome too😎👍. Loving that ironmongery as well 👏👏👏. 😵giant hogweed flower in the closing sequence😲

I like my steaks well done, I'd have sent that one back to the pasture with a bell around it's neck... I'd forgotten all about damper, I need to get out and make myself some. Beautiful area to be walking, and what a well behaved girl Maggie is :)

I used to eat steak medium well, but once I went to a steak restaurant which was very dimly lit (couldn't see the food), had a very expensive prime rib that was medium rare. I wouldn't have tried it if I could have seen it, but its was so good that from then on, I order medium rare.

Have you ever seen the 1979 movie "The Earthling ". Filmed in Australia, has bushcrafting in it long before it became popular. Stars William Holden and Ricky Schroder. Look it up, you will enjoy it. I first saw it in the early 80's. I have it on DVD and watch it ever so often. Was the next to last movie William Holden made before he passed away.

Great day out...only way to make it better would be to add a canoe...I wonder if anyone makes a “canoe stove”? Boil some water for tea and put in a bagged noodle lunch.

Almost a pommy Les Hiddins! 🤣🇦🇺 Simon, I think you’d love the old series of “Bushtucker Man” from decades ago. I don’t know if it’s available there but the are clips on RU-vid. He was an Australian army officer who went out learning about native foods from aboriginal people, and then taught what he’d learned to our soldiers. For an officer in the Pongos, he’s not too bad… 😉

Damper cooked Aussie style is usually done in a camp oven (Dutch 0ven) and the dough rise is very good with a browned crust on top. For added flavour I add some raisins or chopped dried apricots. The result is yummy. Great times you have. My mantra -- What makes you happy, DO THAT!

BTW, here in Balochistan Province of my Beloved Pakistan (My Home Town), We also make Breads called *KAAK* on stones just like your Dampers. Meat cooking is exactly like yours except for the Spices. Us Baloch don't use too much of Spices like rest of the Subcontinent, except for the Younger Generation. Maybe one day you can come and explore/experience our way of life. One day, Maybe. For tea's you should use a spoon full or two but that'll make like 3 cups..... FYI wild garlic bread is definitely worth a go next time they're in season.....or just go grab a bag of mix-in's from the flour isle in the supermarket because that works a treat

Simon just a little advice on cooking a traditional Aussie damper mate.Being a kid from the bush I started work at 14 as a billy boy and general rusabout for a gang of fencing contractors camped out in the bush. The billy tea had to brewed and dampers cooked by 10am sharp for smoko otherwise a sore arse would be felt. To cook dampers to produce a nice crust, they would be laid directly on a bed of ashes, just like you've got there and a layer of ashes were racked over to completely cover them. I usually did 6 to 8 at a time, depending how many blokes were going to have smoko (morning tea time, and a smoke). it usually took 10 to 12 minutes for them to cook. Take the dampers out the ashes, give them a good dusting over and they were serviced broken (not cut) into pieces with some Golden Syrup poured over and washed down with tea that only a billy over an open fire can produce. Billies were made from an empty Sunshine Powdered milk tin that held about 4 litres with a piece of fencing wire for a handle. There was no lid and the tea took on a smoked Eucalytus flavour. If we were in Narrow Leafed Ironbark country, I'd throw a couple of crushed up Ironbark leaves in the billy water a few minutes before it boiled. This gave the tea a really nice soothing Eucalyptus flavour. There were no Lemon Myrtle gum trees growing in our area. As soon as the billy started a rolling boil (not before), measure out loose tea leaves in a cupped hand (about two tablespoons full to 4 litres of water) chuck the tea leaves in the water and IMMEDIATELY, grab the billy by the handle and swing it in a circular motion 3 times overhead then stop and watch the tea leaves roll over in the billy. This steeped the tea ready to drink. So fresh hot dampers, Golden Syrup, freshly brewed billy tea, and a roll your own fag (no tailor made fags in the bush those days, as every bloke had his own tin of Log Cabin fine cut tabacco, and cigarette papers) meant there were a mob of happy blokes having smoko.Who could want more. If I stuffed up anything, it was a guaranteed number 8 (hob nailed boot size) in the arse. Smoko was a ritual. All gone now though after 55 years.

Your dog has good food manners. The minute we sit down to eat a steak at our house our Corgi is like a vampire who hasn't eaten in 100 years - she's a shocker. I can't blame her though, the Wagyu and Angus steaks are bloody beautiful.
