*Ingredients:*
- 1 cup split urad dal (black gram lentils)
- 3 cups water
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
*For Tempering:*
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies, slit
- 2 tomatoes, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
*For Garnish:*
- Fresh coriander leaves, chopped
- 1 teaspoon kasuri methi (dried fenugreek leaves)
- Lemon wedges
*Steps:*
1. Rinse and soak 1 cup split urad dal for 30 minutes.
2. In a pressure cooker, add the soaked dal, 3 cups of water, turmeric, and salt. Cook until soft.
3. Heat ghee or oil in a pan, add cumin and mustard seeds, and let them splutter.
4. Add onions, ginger-garlic paste, and green chilies, and sauté until golden brown.
5. Add tomatoes and cook until soft.
6. Add turmeric, red chili, and coriander powders, and cook for 2-3 minutes.
7. Add the cooked dal and simmer for 10-15 minutes.
8. Add garam masala and crushed kasuri methi, and mix well.
9. Garnish with fresh coriander leaves.
*Serving:*
Serve hot with roti, naan, or rice. Squeeze some lemon juice on top for an extra zing. Enjoy!
