RECIPES:

Chicken, sweet potato mash and Chimichurri sauce
Pan fry chicken in butter and olive oil with salt until cooked on outside then cook through in oven on 180 degrees.
Boil peeled sweet potatoes cubes until ready to mash
Chop up feta, 1 red chilli, handful of coriander and two spring onions and add to the mash once cooked. Squeeze in juice of half a lime and season with salt and pepper
Serve with Chimichurri sauce:
In 3 tbsp red wine vinegar let ¼ red onion diced, 1 red chilli chopped finely and 1 minced clove of garlic sit for ten minutes and sprinkle with a pinch of salt. Chop up a large hadnful of coriander and parsley and add after ten minutes and stir in 5 tablespoons of olive oil. Serve over the chicken.
