Avocado, Quinoa & Mango Salad (HINDI)

On Episode #4 of my #YehDilMangoMoreSeries, I am making this super delicious Mango Avocado & Quinoa Salad.
You will Need:
Salad Dressing:
-1 tbsp Olive Oil
-1 tsp Cumin Powder
-1 tsp Garlic, minced
-1 tsp Coconut Sugar
-Pinch of Black Pepper
-1/2 tsp Pink Salt
-Juice of 1 Lemon
-Mix Well
Salad Ingredients:
-1.5 cups Quinoa, cooked
-1/4 cup Spring Onion, chopped
-1/4 cup Sweet Corn, cooked
-1/2 cup Red Bell Pepper, chopped
-1/2 cup Edamame, cooked
-1/2 Avocado, chopped
-1/2 cup Mango
-1 tbsp Roasted Flaxseeds & Watermelon Seeds
-Garnish with Spring Onions (Scallions)
Method:
1) Cook Quinoa, sweet corn and edamame prior to making the salad.
2) In a bowl add all the dressing ingredients: olive oil, cumin powder, garlic, coconut sugar, salt, black pepper and lemon, mix together well.
3) In another bowl, add cooked quinoa, finely chopped spring onion, cooked sweet corn, cooked edamame, chopped avocado, mango pieces, roasted flaxseeds and watermelon seeds and the salad dressing. Toss together well, till the salad dressing is evenly combined in the salad.
4) You can choose to chill the salad in the fridge for 30 minutes before serving or serve directly. Garnish with spring onions while serving and enjoy!
5) If you don't have access to edamame beans in your area, please use cooked chickpeas instead in the same quantity.
