Avoiding mistakes when making cold smoke is really important as not every method of creating cold smoke works reliably. This is never truer than when using fine wood chips. Wood chips burn significantly hotter than fine particulate wood dust which is usually combusted in a burn tray at a much slower and cooler fasion.
This video demonstrates the way to use fine chip to make reliable cold smoke and goes on to show how to remove any heat from the smoke so it's possible to cold smoke food safely.

Very ingenious use of the sieve and the mini incinerator Turan! I keep meaning to make a batch of Biltong and you’ve just given me the inspiration now😊 I’ve cold smoked it before in my Weber with the ProQ and was delicious (think I used oak dust IIRC?) Thank you for sharing👌🏻

Perfect chips for the smokai. I got the 3 litre magnum when you put out a video on it, I find mine perfect now. Took a little practice but worth it. I'm gonna try this method next week.

Using a sieve like that is a great idea. I wonder if the larger 'Artisan' size of ProQ cold smoker would work with the small wood chips you used in this video?
