Rice is rich in starch and sugar are usually low in protein, which when cooked at high temperature create a toxic substance, acrylamide, which hampers brain health. High starch content also increases sugar levels that may lead to the potential development of diabetes, obesity and other health hazards. While some carbohydrates are used by the body, the unused ones are stored as fat. Therefore, it is imperative to de-starch these foods so that you can consume these foods without having to think of any repercussions.
But little amount of healthy nutrients is lost by washing the cooked rice. So, it is advised us to compensate the lost nutrients with healthy veggies and lean proteins.
ProcessesExperts recommend drinking rice water to soothe digestive ailments such as food poisoning, diarrhoea and even indigestion. Consultant Nutritionist says, "Kanji is a traditional drink which has been around forever. Children are constantly being given Kanji water when they are unwell when suffering from diarrhoea." "Rice water contains an abundance of vitamins and minerals and prebiotics essential for our gut health,"
. If it was that easy we could just wash all the high calorie food and enjoy them guilt-free. But I strongly believe in portion control, one can eat anything he/she wants, as long as you eat it in moderation. This process reduces the starch by almost half but doesn’t remove it completely.

additionally, put the rice in the refrigerator for a day, then take it out and reheat it-this further reduces the sugar content by changing the structure of the carbohydrate molecules-it further slows their absorption into the blood stream

If I am not mistaken doesn't the rice need to be cooked with 2 TABLE SPOON of coconut oil?

The way the cooking process is done is very good to avoid diabetes. However I would be avoiding drinking the kanji water because of the starch in it which is the main purpose of cleaning the rice in the first place. It is usually given to young kids with added sugar as a supplement of their early diet especially those with limited supply of milk.

After boiling & throwing away the cooking water, I rinse rice with cold water that will take away some more starch. Drinking starchy water will defeat the purpose. Rice water has pectin , using that water to stop diarrhea is useful.

I had an Indian friend who boiled up rice in lots of water. Once the rice was done he took his hands and grabbed up the rice and squeezed it to get out the excess water. I thought that was so weird cooking rice that was, but it tasted good.

Seems like this practice was done for many years but how come there’s still lots of people who has diabetes n wt rounded belly. Proportion is the key.

In our house my granny used to use the kanji water with curd to wash hair..sour card especially as in those days she there was no fridge.

If rinsing starch out of rice improves rice’s nutritional profile, how do we benefit by drinking the starchy rinse water? Aside from this logical puzzle I greatly enjoyed the video. The narrator’s voice is beautiful and the preparation of the rice is delightfully gentle.

For a baby to grow strong and healthy bones, proteins are the vital ingredients. Rice water is rich with these vital proteins and very beneficial too as we can start feeding a baby on rice water from a very young age of 6 months.

It's good to wash it so many times and then when cook throw the water to be safe ...rice has arsenic which is bad for our health.

Very interesting, especially reusing the the boiled rice water for other uses as rinsing hair or starching clothes.👍 Says that this nutritious "kanji water" can be consumed also but doesn't it have much bad/harmful carbohydrate/sugar content or/and it doesn't because it is cooled and doesn't spike blood sugars?

This method is good. But never cook anything in Aluminium vessel. Use brass or bronze. You can even avoid stainless steel also. Earthenware is excellent if you can handle and maintain it well.

avoid brass copper aluminum or bronze or iron pans; all of them transfer the metal particles into the food, which greatly damages our systems. use stainless steel, it transfers nothing.

Here the gruel is drained off to decrease the content of starch from rice but at the same time mentioning i.e, one can drink such gruels/boiled rice waters .why?

Kanji water need not be consumed everyday. It can be consumed occasionally as it has some water soluble vitamin in it . If you brown the rice it will change the starch sugar profile...on dry heat in a skillet low to medium it really works all that rinsing is for the birds it doesn't change the chemistry for real but of course, you don't hear me

Hello Dear When u consume Starch water first say an hr before you have lunch it works like soup It’s fills your tummy and this will lead to less consumption of rice in the subsequent meal. In my country we usually add double the water and after cooking for a while, let all water to be absorbed. No draining needed.

In pressure cooker..same mathod..but better boil the rice till cooked then filter rice,so it will be less starch rice...

If you are healthy person then drinking kanji is very healthy as it has all the washed Vitamins but if you diabetic then. rice water is mostly starch, which means it is simple sugar and carbs that you are giving your body, it can spike the blood sugar levels. In fact, cooked rice is also not considered a very healthy option for a diabetic.

You remove starch by blending all the cooked rice with water and letting the starch settle in the fridge, then pouring off the other for consuming

Some people are convinced that the sugar in the rice is removed by this method. Others are not. In my opinion it has no effect. I've had diabetes for 22 years.

This is an age old process of cooking rice in South India in all homes, till the concept of Pressure Cooker came in. However even now mass cooking for functions are done this way only. I remember we South Indians Telugu families the FIRST Question to the bride is amma do you know how to "Madam thank you for giving the information for Rice cooking in better interest. 🙏

Draining it makes rice less starchy . This is for people who are fighting with Diabetes. They can discard starchy water and consume rice . Young children and other healthy people can consume starch water first and then rice .

@@upscalehealth instead of draining the excess water for healthy ppl can we cook the rice in little less water so that all water gets absorbed by the ruce and there is no water left to throw .In that way rice grain will absorb all the nutritious kanji water na..why use extra water and then do the additional work of draining it and then drinking?

We all do it this way only. (And if the strained rice water is so beneficial, why not let it stay in the rice?). We should strain it for removing starch, and then drink it for other benefits, what queer logic!
