Who is Dr. Ergin? Dr. Ahmet Ergin is an endocrinologist with a particular interest and passion for diabetes care. Dr. Ergin earned his medical degree with honors at Marmara University School of Medicine in Istanbul, Turkey. Then, he completed his internal medicine residency and endocrinology fellowship at Cleveland Clinic in Cleveland, Ohio. He is a board-certified physician in Internal Medicine and Endocrinology, diabetes, and metabolism. He is also a certified diabetes education specialist.

It is almost 2.5 years that I mapped out potatoes along with all high carb foods, my only occasional carbs are sweet potatoes and bulgar wheat. My diabetes including retinopathy, skin tags, joint inflammation, gut inflammation, arthritis and cravings for sugar have all been reversed. I am living a pain free life on zero medication just low carb diet and given the opportunity i will not eat potatoes, sugar, pasta and any processed foods. Whole food is medicine! 🇬🇧Greetings and massive thanks to Dr Ergin.

Didn't know about the microwave cooking but one thing I;ve heard is that it's best to cook the potatos twice. i.e cook them, cool down, keep a night or so in fridge and then heat them up again. That's one way of turning starch in to resistant starch (if I remember it right)

I boil my potatoes with the skins the day before then put them in the fridge until I need them. I always leave the skins on when I finally use them. A glucose check after the meal indicates only a moderated increase in glucose level. Apparently, this was known in the past as I can remember my grandmother advising that you should always wash the pasta in cold water because it "breaks the starch".

Your grandmother was clearly not Italian , if she advised you to rinse your cooked pasta . Instead make sure that it is al dente , this will decrease your blood sugar spikes.

My father, who lived to age 98 with diabetes diagnosed in his 40's. He was the poster child on how to live a fulfilling, long life with diabetes. He found that eating a small red potato, cooked in the microwave for dinner did not raise his blood sugar.

I was recentlly diagnosed with Type 2 Diabetes. I immediately gave up the two things I loved, bread and sweets, and my blood glucose levels have dropped to the good to excellent levels. However, I'm always looking for more options and I appreciate the information you provide.....here come the spuds!

Hi Ken, there are many interesting videos on youtube about how both intermediate fasting and long-term fasting can have an amazing effect on diabetes. Of course only if you can and if you have medical supervision, but fasting is a wonderful reset for the whole body and definitely helps to regulate the blood sugar. Also, if you are looking for replacement products for bread (by the way, if you freeze bread, it is also healthier) and other things, you might want to look into products for people on a keto diet. Keto bread (or e.g. almond flour, if you want to bake yourself), keto chocolate bars and such have very little carbohydrates and hardly influence the blood sugar. And I would recommend to get a stevia plant to pick a leaf now and then for your tea etc.. Stevia doesn't influence the blood sugar either, but is crazily sweet, half a leaf is enough for a whole can of tea. Also cinnamon helps to regulate the blood sugar. All the best!

I is good to know how to prepare your food, but one of the key things people fail to do is to exercise and that is powerful as the body removes the sugar from the blood and place it into the muscle. So 30 mins of walking daily is a win win. Some activity is better than nothing even 10 mins in increment will help your body. 12 yrs ago I was prediabetic at 6.3% A1C. I began to walk on my breaks 10 mins in the morning and 10 mins in the evening. Of course I do love vegetables as well and portion size my meals. 4 oz protein 4oz carb and half my plate is lots of vegetables. I drink my 8-10 glasses of water daily. Although I am overweight I do NOT have diabetes as I exercise and do not overeat. Mark you, I make sure my weight is not in the 200 range. The reason I am holding the weight is because I eat late after 7pm so I am working on adjusting my dinner time.

I'm a first-time viewer but I was greatly impressed about the freezing the potatoes and then putting them in the microwave. I've been mic waving potatoes for years but now I'm going to freeze them a bag full I'm 63 and worried about diabetes My younger brother is pre-diabetic so I'm going to pass this on to him too. oh and I just subscribe.🙏

I've been microwaving potatoes for putting in soups and chowders for years. I found that they hold up better in the soup instead of them crumbling. I've also found that I don't have to "cook" my soups as much if I steam the veggies and microwave the potato chunks. The broth picks up all the flavors just fine from them mingling overnight in the fridge.

My understanding is that boiling potatoes removes some of the starch and thus is a safer choice for those with blood sugar issues.

I just love the Sugar MD he has really given me the best medical information ever. I'm a RN but I knew about diabetes because of being a RN. But with having all of my nursing experience I was lost when I was diagnosed with type 2 diabetes. I went to nutrition classes and started this every day regiment and it worked very well for me. I have had type 2 for 10 years with ups and downs mostly stubbornness this past year i had a ambulance visit over my sugar after that i got serious and started looking up everything and found these videos and started taking your berberine with alot of success i went from a 250 to a 99 and still working on it making it better diet is the hardest because it is more of a life style change THANK YOU for all your video's they have helped me alot

Equal amounts of vegetables with your starch and DO NOT TAKE YOUR DIABETES MEDICATION WITH FOOD instead take it 20 minutes before eating . When you take it with food sometimes it's not absorbed well .

I saw this earlier and am constantly amazed of all the things we learn. I have no excuse now to make potato salad! I knew that these starches and sugars are not healthy for us but I let myself stay stressed and was eating really bad. I waa pre-diabetic and started eating right and have now lost 35 lbs. My hand and feet quit hurting and my BP is right with taking a small dose as needed. Hope to ditch the med soon !

Robertbaker I did same thing and lost 40 pounds …. I eat no matter what three meals a day and a snack in between. I couldn’t get it in my head when doctor said to eat three meals a day ,I’ve never was a breakfast person and if I had lunch I wouldn’t eat dinner. But… I told her I’ll give it a try and with some changing what I ate and the portions,Omg I felt so good and energized. Wasn’t dieting just eating right 😊 Oh and drink 16 oz of water before each meal makes you feel fuller.

Great video: How i make potatoes. I scrub, cube them, saran wrap them on a plate and micro-wave them for 5-6 minutes. A drop of salt and a dab of butter and then mash with the end of a fork. Bliss. But I will try to freeze before and see how that works. I am down from 240 to 160 in 4 years since my triple bypass 7 years ago.

Fascinating explanation. Thank you for the information, I'll try freezing some raw potatoes right away. Most convenient method would be to cut the spuds into chunks (after rinsing) to freeze them. This would make defrosting much easier. Think I'll go have a microwaved potato right NOW.

What about roasting potatoes even after putting them in the fridge because most people love it and prefer it that way? Microwaving potatoes gives it a not quite so satisfying taste as roasting. Roast potatoes and jacket potatoes done in the oven are delicious. Although I don’t eat potatoes, carbs, sugars etc but would be nice to know so can incorporate back into my diet once in a while. Oh, I’m not diabetic I have systemic sclerosis and winning the battle now as I’m conscientious of what I eat.😊❤

Cook it then freeze. Later heat it again.

Make things like pasta and potatoes then place them in the fridge. Reheat and this will create resistant starches. Also a good idea to place bread in freezer and take as needed. These processes reduce blood sugar spikes…

@@paulsauve3855 it’s all talk on YT without measuring blood glucose or referring to experimental data. Yes the percentage of resistance starch is low in raw potatoes. No matter how we cooked raw potato will get hydrolyzed (microwaved vs boiled vs steamed) which will be further converted into glucose may exceed the limits based on your metabolic rate.

New subscriber. I recently learned about putting cooked rice in the refrigerator overnight to change the glycemic properties of the starches. I happened to run into an older diabetic woman in a grocery store line and told her about the rice. She was very thankful for that information. Sharing this now too. Thanks you.

I experimented already with this method. It might work for somebody else, but not quite for me. People need to check their bg for a realistic effect on their body and then decide if it is doable for them. I eat half of a potato every once in a while, but I fill it with meat cheese and cream. This way it does not affect me too much. Better than the resistant starch method.

I have been doing this for years not in order to cut down on starch but to cut down on cooking time for baked potatoes, baked sweet potatoes. I would microwave them halfway then transfer them to the oven so they could bake faster. I did this because the baked ones taste better than the fully microwaved ones. I never thought about microwaving before air frying may see how that goes. Love your humor, Sugar MD!!!!

I have a microwave steamer that takes about a half an inch of water in the bottom of it and my potatoes come out just lovely . They don't touch the water at all . I have been cooking my spuds like this 4 years .

I saw a scientist saying that if you cook them and then refrigerate them for a few days they have less of a sugar spike. There was a study along with it that they quoted. They used russet potatoes. I also saw the same thing for white bread. Freeze the bread first and then toast it.

I would like to caution People that are type 2 Diabetics to check an hour after eating these Potatoes with their meters to make sure they are not spiking your sugars to high.. Best to make sure how your body reacts. I did try this with rice and found rice did spike my blood pretty good amount. More than i would wish it to be. Be safe and test with your meter..

Only long grain basmati rice cooked n kept in fridge for at least two day reheating n consuming will not give sugar spike ....with any other rice except basmati will spike your sugar in the blood.....it's a tried tested several times in lab as well by me

I’ve just had a breakfast of miniature potatoes cooked without water but with oil and butter in my air fryer (seasoned with thyme, garlic, s&p and finished with sour cream) I felt amazing afterwards and didn’t have a sugar spike afterwards. Would this be the same effect as microwaving?

Thank you for your advice. I've started to follow a diet abstaining from eating a lot of fruit, pasta and bread because I've been diagnosed with border line diabetes. This condition runs on my mother's side of the family. I don't want to take medication so my option is to diet. I'm determined to do so no matter what. Thanks once more doctor.

Dr. Ergin, I recently discovered a new low glycemic potato and purchased the seeds to grow in my garden this year. They are Huckleberry Gold potatoes. I have not tried them because they haven't made it to my local stores but wondered if you have heard of them. MSU researchers have found that Huckleberry Gold has a low glycemic index. This variety does not cause a rapid spike in blood sugar like most starchy foods. Have you heard of these before?

These potatoes are lower in carbs than russett potatoes, but only by about one fourth. Still too high for a diabetic like me. The difference between 60 for a russet and 45 for a gold is not enough to make up for the sugar spike.

Microwave frequency electromagnetic energy does not cause food to emit harmful high energy proton and /or neutron particles (particle radiation or electromagnetic radiation aside from heat). Just don't harm yourself by burning your skin with a hot potato or hot dish. If you choose to harbor continued superstitious doubts, use a Geiger counter to measure the radioactive emissions from your food before and after microwaving the food. Beware of that broccoli, cauliflower, potatoes, and bananas which can trigger radioactivity alarms!

I've had success with shredded hash browns. When you shred the potato, you have to rinse with water until the water runs clear. Then blot dry with paper towels before cooking them. My sugars don't rise as high that way.

This is very interesting, I didn't know freezing potato would make so much difference, then microwaving them, I use frozen mashed potato bought in the local supermarket, just looked at the nutritional blurb, and it says for a 300g serving Carbohydrates 48 and Fibre 7.5, which means a carb v fibre ratio of just 5 to 1, which I have been told is the best target to aim for, though 10 to 1 is also considered acceptable, anything below this is better, they have to be defrosted in the microwave as well, so I will continue to use this mashed potato, and skip fresh for the reasons mentioned in the video, but will reduce the amount I use.

I will definitely try this. The lentils and potatoes didn't work for me but I will give this a shot because I love potatoes. I have heard that potato salad that has been in the fridge at least 12 hours is resistant to spiking glucose levels. I have had mixed results, must eliminate some other variables. But looks promising.

I am familiar with resistant starch. What I have also read, is that it can be used for rice as well, which I then use as part of my stir fry meals. I cook the rice as usual, let it cool, put it in the freezer, then take it out (after being frozen) and reheat it. If you are a diabetic, try using Wild Rice. Wild Rice is not really rice, but rather a grass. It is very healthy for you. Do not expect it to taste like Jasmine rice, which is soft and has almost zero nutrition.

As a Mr potato head, I love potatoes! Years ago, I followed Jillette’s( how I lost 100 pounds on the potato diet. Penn Jillette) and I lost 70 pounds. On a 5’3” frame, I went from 245 to 175. I did microwave them. Now I am going to start freezing them first. Thanks!

OK, and good job so far, but with that frame you're still 40 pounds overweight, in fact obese according to BMI. You might want to give up the potatoes altogether. What works for some does not necessarily work for others.

This is MOST valuable! Thank you so much Doc as I am a spud-lover but removed them entirely from my diet. NOW this can be changed with: first freezing them, then putting them in the microwave the next day (just what I do with rice). I lost about 40 Pounds by following the low carb advice but it hurt me to not being able eating potatos. THANK YOU SO MUCH !!!!!!!

forget potatoes, you can do this with rice. Just refrigerate your cooked rice for a day and then microwave it to reheat it, then you can get rice which won't raise your GL much!

I find frozen potatoes a bit mushy. I pressure cook my potatoes in just a little water. I do a lot then refrigerate them and reheat in the microwave as needed, 3 times a day with my 3 meals. Love them and grow my own. So what do you think of pressure cooking? Perhaps I should put in a trivet so the potatoes are out of the water.

Initially, I thought that this was one of those videos with a catchie title from a moron who was trying to attract views. Today, it was the fifth time I ate potatoes that had been cooked in the microwave before throwing them into the air fryer. AMAZING! Before this, I was always having sugar spikes seconds right after having eaten roasted potatoes. Now, it's been Ike 4 hours since I had them, with absolutely NO sugar craving. Same as previous 4 times Incredible! Thanks 🙏

@@Vicky-enb I cook them at 6-minute intervals and give them a stir so that they cook evenly until medium soft. Sometimes it doesn't give me the sugar spikes but some other times it does, but not as bad as without pre-heating them in the microwave.

The last time I home canned potatoes, the directions said to dice the potatoes and let them soak covered in water overnight. I did. Poured off the water, put the diced potatoes in jars, added fresh water and pressure canned them. Without all the starch that leeched out, the liquid in the jars after processing stayed nice and clear. I'm wondering now how much difference that makes in insulin response when they're eaten.

​@@doityourownway, no, it is rare for people to can potatoes. But it does preserve well. More people harvest and store whole, unwashed, in a cool dry place, sometimes in straw or wood chips. What is common in your area?

@@charlanpennington3989 We don’t grow potatoes. My country is too small for agriculture. All potatoes are imported either from neighbouring countries or as far as EU, USA. Mostly fresh potatoes. I checked recently in the supermarket they do have frozen peeled baby potatoes. Canned potatoes, nada.

I don't own a microwave but I'm thinking the freezing then cooking method might still help mitigate some of the carb issues. I love small space living and I've never wanted to devote space to a microwave. I cook everything from scratch and microwaving food seems sad to me. I don’t understand this. A freeze dried potato needs to have its water replaced before cooking or it’s texture is more like Cheerios than potato. Freezing a raw potato will cause it to turn black, I think. So, do you microwave a raw potato, then freeze it and reheat later or can you nuke the raw potato and eat it when done?

I like them Baked or boiled, eaten with the skin on, with a bit of salt, pepper and vinegar, and they slim me down and I feel great, not drowsy or hungry. I cook them all then warm up or eat cold like a salad.

I have found that my blood sugar behaves differently after eating potatoes verses rice or bread. If I fry up some potatoes for dinner, or have some fries from Five-Guys, my blood sugar doesn't go above 165, whereas if I eat some chinese food with rice or kabobs with rice, my blood sugar hits over 200! Same when I grab a sub from Jimmy Johns, or Subway...again, that bread sends my blood sugar over 200! But, microwaving potatoes? I guess if you're making mashed potatoes that wouldn't be bad...but how about slice raw potatoes, freeze them over night, then microwave them, then airfry them to make french fries! How does this fit in this study you're talking about?

People told me to avoid using the internet to help me with my diabetes diet....but I'm so glad I did my research and found the SugarMD! Even better, with the info from this video, I can now occasionally enjoy one of my favourite meals that I ditched when I was diagnosed with T2...a baked spud! We can buy pre-cooked baked potatoes over here that are frozen, which we can zap in the micro in a few minutes! Thanks dude!

Nice thanks I am in Alaska we can get French fries and tater tots but not whole baked potatoes. But in the winter now that I know this I guess I will be microwaving potatoes, freezing them then, by chucking them outside -40C, back in microwave. Just a note I heard another Dr say that study says putting them in the fridge after cooking makes a difference than just cooking them once and eating so try both and check glucose. Good luck, I got a continuous glucose monitor and my fingers are thanking me, they were pin cushions, lol😊

​@@krisqueen5939, I found my pins and needles reversed from a 10 day challenge of iodine, a dropper in water daily. Went from about 23 shocks waking me per night to zero. Then only used it when it tried to start up again. That means it was m e r c u r y.

I pulled out my French fries, out of the freezer, to check the oil it contains. Sunflower oil. It’s an oil, just like peanut oil, that can take high heat. In my opinion, that’s pretty healthy, except for the omega 6, but I don’t each French fries often.. And now, after this video, it’s previously frozen, which retains its good starch, just added a bonus to health! 👍

Great info! I'm a potato freak. Love them. I had heard or read somewhere that red potatoes are the healthiest with skin on and have more resistant starch and I did know that if you cool them it's best! Is that true?? The best way to control glucose spikes, is to eat vegetables first, then protein, then starches, and lastly maybe sweet if you are craving some. You could also eat some whole fruit at the end of the meal to get fiber.
