Back-to-School Cutout Cookies

This tradition of back-to-school cutout cookies started way back when I had preschoolers and was teaching them to spell their names. I would mix up the lettered cookies and have them put them in order. They LOVED it and they learned. Well, even after they could easily spell their names, they would still ask for the name cookies and the tradition started of spelling out their names in cookies for the first day of school. My kids with shorter names were so envious of their siblings with longer names! #DeliciouslyBold
Sugar Cookies
1 cup butter
1 1/2 cup powdered sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon almond extract
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Icing
4 cups powdered sugar (or more to thicken)
4 Tablespoons whole milk
4 Tablespoons corn syrup
1 teaspoon almond extract
In a large bowl, mix together all the ingredients until light and fluffy.
*Preheat your oven to 375°F. On a lightly floured surface, roll out one portion of the dough to about 1/4 inch thickness.
*Bake the cookies for 7-8 minutes or until the edges are lightly golden. Allow them to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
*Prepare the Icing: In a medium bowl, whisk together the powdered sugar, milk, corn syrup, and almond extract until smooth. If the icing is too thin, add more powdered sugar until you reach your desired consistency.
*Decorate the Cookies: Once the cookies are completely cool, use the icing to decorate them. You can either dip the cookies in the icing or use a piping bag for more detailed designs. Allow the icing to set completely before handling the cookies.
Arrange the cookies to spell out your kids’ names and let them have fun putting the letters in order. These cookies are not just a treat but a fun learning tool for the first day of school!
