Something I've noticed about your parenting (and something I think we can all learn from) is that you never, EVER dismiss anything your kids say. You listen and make them feel like what they have to say is important (even if it's perhaps a little silly haha) and I admire you so much for it. You're raising some gorgeous kids, inside and out.

I make those egg biscuits for my family and used to make them for work occasionally. I would love the recipe for the muffins. Those look delicious and would probably be another way to get my 11 year old daughter to eat more bananas since she needs to eat more than the average person (has a health issue).

You should use muffin papers sprayed with nonstick for your egg bake too save on clean up.

Amanda - - Just a quick tip taking the shells off the eggs. After boiling the eggs and letting them cool tap the egg on a hard surface then roll them with the palm of your hand on a tea towel. The shell should then peel off a lot easier. Does anyone else peel eggs this way ??

Wow Amanda, the soup looks so good. Congratulations! Being Asian, I would put the ginger in a blender with the onions, that way, I don't have to take out the ginger. Ginger is good for blood circulation. I will try this recipe and add some rice to it Lol. I love your way of parenting, you cooked a whole pot of food and the kids are not picky. I am that way with my kids too, they would eat what I cooked and not be fussy. I have friends who would ask their kids on what they want, that's a big no no for me being a working parent.

Ok so over here we make an egg salad with potatoes. It's not really that healthy so we mostly only ever make it whenever we have a braai. But all you do is use twice as many eggs as potatoes(you can do less potato), make mashed potatoes and let it cool and grate the eggs and add it and then mayonnaise and seasonings
