New York strips with chupacabra seasoning. I did what you do with brisket and ribs though and kind of tucked the steak into shape instead of stretching it out. It's amazing how much difference that makes to the cook of the meat...juicier, more tender. You're the best!

I soaked the corn in some salted water then kind of smoked/steamed them on the offset before charging them on the kettle! Smokey, seasoned, sweet deliciousness 🤣🤣🤣 I forgot to turn the camera on for the sausage and corn.
Each pit runs a little different Kevin. This cook on the offset at 275 degrees took about 5 hrs. At 300 degrees on my WSM its going to be between 3 and 4 hrs. What are you cooking on?
