BACON & BOURBON JAM - This is food for the gods!! a must try recipe. Sadly I didn't invent this myself, but its a so good.

Recipe
Ingredients:
500 gram bacon
1 cups of shallots, finely chopped
1/2 cup onions, finely chopped
2 garlic cloves, finely chopped
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
1/2 cup bourbon
1/4 cup maple syrup
1/4 cup balsamic vinegar (use high quality so you don't need to add sugar)
How To
Cut the bacon in to thin strips
Render the fat of the bacon
When the bacon is nice and crisp seperate the fat from the bacon
Let the bacon cool down and chop it fine
Add the onion, shallots and garlic with 2 tablespoon of the bacon fat and let the onions turn soft.
Add the rest of the ingredients including the bacon
cook for 5 more minutes
Put the bacon and bourbon jam in a jar and enjoy the glory!!
