I used to do these in the oven on sheet pan with onions underneath. This is great! My wife has already requested burgers at some point for Memorial Day weekend. But the butter on your buns comment had me rolling. Honor the fallen first!! Another great video!
I enjoy your videos because I always learn something and get news ideas for things to try on my griddle. Your resume as a cook/chef got my attention because you know what you are talking about. BTW, here's something to try when the parchment paper starts curling up real bad. Simply wad it into a ball and then flatten it out again...easy to manage. OH...your wife is one of the best videographers.

Yeah I filmed today and while the griddle was hot I cleaned it up from the bacon to add the french toast I was making...i had to explain to Amy why it was important..Maybe I will make a video on what happens if you DONT clean as you go...interesting

Looks awesome brother! Bacon makes everything better. I just finished watching your vegetarian stir fry video and it reminded me of the first time I had yakisoba. I was an e-nothing in the Navy and it had to be one of the best things I had ever eaten. To this day, yakisoba is one of my favorite meals I ever had on the mess decks. @@TheFlatTopKing I damn near ended up at camp, carrying a rifle, but I'd fucked up my ankle and was held back. While waiting, a spot opened up and I was sent to WHCA instead. Not sure I'd have liked camp; was more like 5th phase boot for us crayon eaters.

Neil every time I see you cook it just absolutely amazes me, the stuff you put together looks fantastic!! My wife and kids and I are going to Arkansas for memorial day weekend to see my older daughter and grandson. We are bringing the 22 inch Blackstone E-series griddle with us. Great video. Just yesterday, my Mom and I were talking about White Castle and how time consuming it was when I replicated them one time. I immediately sent a link to her for this video. She will turn 83 in July, but I am sure she will have friends over.
We have used my pit boss for our first few cooks. So far so good. You make everything look easy though. This is on our list of things to try. I love your innovation for the meat press. The good old cafeteria tray or cookie sheet. Nice!

Great idea for sliders Neal, We're doing baby back ribs on the Smoker, home made Boston bake beans. Broccoli salad, and a Kentucky butter cake for dessert. What do you do that you have to get up at 2:30am? if you don't mind me asking

I saw a camp Chef outdoor stove by your table. What meals do you make with that? It'd be awesome to see you make meals using that stove. Incorporate all your equipment into 1 meal even. Great videos!
Freaking out here Neal! My Pit Boss arrives tomorrow and I’m a purest. Your using a metal spatula on the porcelain griddle. Won’t that scratch it? You’re the MAN! Watching your videos make me feel I’m so ahead of the game before I even fire my griddle up for the first time! By the way what was the griddle temp?
I think the metal thing is all about Confidence...Knowing what to do and what not to do...You have to use at your own risk and all spatulas are not created equal..I swear by mine... I still use my wood scraper as well...I am not sure on the temp...once the onions were hot and cooked I added the beef...Since its not directly on the flat top for a sear I wasnt worried about temp. The onions helped steam and flavor the meat...
This is definitely a hot button topic... And my answer would be that you have to use metal utensils AT YOUR OWN RISK. The actual Pit Boss Ultimate griddle manual says "non-metallic utensils". I know of a handful of Ultimate griddle owners that have been using metal utensils on their griddles for a while and they've said that there hasn't been any damage... but like I said, you have to use at your own risk - I'm sure that Pit Boss probably won't replace your griddle top for you if you damage it with metal utensils. Also, there's a difference in the types of metal spatulas... my preferred spatula has rounded ends and does NOT have the sharp beveled edges all around. That's the spatula that I like for my other griddles as well. I would never use a square ended, beveled edge spatula on mine. Also, you'll notice that I still use a wooden scraper/spatula to actually scrape down the griddle surface (NOT a metal bench scraper like I use on my other griddles). Another thing to note... just my opinion - but it seems like non-stick cookware has come a long way in the last decade... I was actually at Costco recently and I noticed that most of their non-stick cookware sets actually say right on the box "Safe for Metal Utensils".

I have a Char Griller griddle and would like to switchover, but am not sure. I know the blackstone has a kit, but Char Griller doesnt. You have any idea??? TIA
