Ingredients:
2-3 pounds red potatoes, cut into small cubes
12-ounce package of bacon, cut into 1-inch pieces
2 tbsp bacon grease (reserved from cooking bacon)
8 eggs
1 and 1/2 cup Mayonnaise
1 tablespoon Dijon mustard
2 teaspoons granulated sugar
1 teaspoon salt
1 tbsp black pepper
1/2 tbsp dried dill weed
1 tsp garlic powder
8 hard-boiled eggs, peeled and chopped
3 stalk celery, finely diced
1 small yellow onion, finely diced
1 medium green pepper, finely diced
Directions:
1. Prepare the Vegetables:
Dice 3 stalks of celery, 1 yellow onion, and 1 green bell pepper.
2. Prepare the Potatoes:
Cut red potatoes into small cubes (about 1-inch). Place the diced potatoes in a large pot and cover with water. Bring the water to a boil and simmer the potatoes for 30-40 minutes or until they are fork-tender. Once cooked, drain and let them cool to room temperature.
3. Boil the Eggs:
In a separate pot, bring water to a boil and carefully add 8 eggs. Boil the eggs for approximately 10-12 minutes. Once done, transfer the eggs to an ice bath to cool. Once cooled, peel and chop the hard-boiled eggs.
4. Cook the Bacon:
In a skillet over medium heat, make the bacon nice and crispy. Once cooked, chop the bacon into bite-sized pieces.
5. Prepare the Sauce:
In a small bowl, combine 2 tbsp of reserved bacon grease with 1 and a 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, 2 teaspoons granulated sugar, 1 teaspoon salt, 1 tbsp black pepper, 1/2 tbsp dried dill weed, and 1 tsp garlic powder. Mix the ingredients thoroughly to create a flavorful dressing.
7. Combine Everything:
In a large mixing bowl, combine the cooled diced potatoes, chopped hard-boiled eggs, diced celery, diced onion, diced green bell pepper, and chopped crispy bacon.
